It's curry chicken, meaning you curried the chicken, it's not chicken curry, how the hell can you chicken the curry - and yes I'm a trini. NO APOLOGY, TRINI 2D NONE!!!!!!!
In every other country they would either say curried chicken to (as you say) denote that you currIED the chicken, but people say chicken curry to denote that it is curry that happens to have chicken in it rather than describing the cooking process. It is Trinis that have incorrect grammar then get frustrated when people don't understand them.

Eddos are actually a smaller relative of dasheen (taro root). Aloo is a hindi word used in Trinidad but I wouldn't know about Guyana.
