Artichokes are a personal favorite and this recipe looks like a great way to prepare them. I think I'll use a shallot instead of white onion.

This is very much like pitelle, a traditional dish from my grandparent's part of Italy. My mom and aunts always made it in the summertime when zucchini are in season. We don't put any baking soda in the batter either. This is nice because even here in the USA, we can always find the artichokes. I will have to try it!

Looks great! I love all kinds of fritters. Other than beans, I don't buy canned vegetables. For frozen artichokes would I need to need to boil them first?

Albert, I tried to bake these, as my husband won't eat things fried. I should have used parchment paper as they stuck to the tin foil. Any further suggestions? The taste was good though. Looking forward to making your tuna spaghetti that you recently posted. TIA!

I'm embarrassed to admit my stomach reacts violently to any crunch in onion. Would it work for me to sautee my onions the let them cool to room temperature. Onion flavor is great but just no crunch. Silly, I know.
