Coolest thing about the "Death can have me when it earns me" line, for me, is it's more evidence of Kratos' progression as a man.
Everyone talks about it because it's a hard line. It's striking. It's corny as hell too, but from Kratos, you know it's not empty talk. He means it. He c a n mean it.
What I love about it is this:
In earlier God of War games, Kratos actively sought death. It's one of the reasons he doesn't fear it and also one of the reasons his vengeance was wildly successful (vengeance is just shame boiled over. He killed his first family and no longer felt he deserved to live, but felt the Gods deserved to DIE even moreso).
He's experienced death many times at this point and probably WOULDN'T give it a second thought.... If not for the fact that he's a parent now. He has an actual investment in the future beyond revenge and knows that he'll need to be alive if he wants to protect his seed, watch it grow, and keep it from making the same senseless (and greedy) mistakes that he made.
Ya'll heard that line and saw Kratos "The Killer". I hear it and see a Kratos that has finally found something worth staying alive for.
