Sourdough 101… tips form a professional baker..
Add more water to your dough.
Your hydration should be at least 75% of the withholding of your flour. So, say your flour is 400g .. your water should be around 300g. Your starter should be about 20% so about 80g. Salt should be about 2% so 8g. And no oil necessary for sourdough. The dough will look wet and messy and sticky at first but after a few folds (I recommend three at least) and at least 30 min resting in between, you’ll be shocked at how amazing and fluffy your loaf will come out, don’t forget to drop some ice cubes in with the loaf when you throw it on the heat. It’s needs the extra moisture to keep the crust from setting before the loaf has time to rise. Happy baking!

Love the wild horses! I went on a hike near Reno NV and came upon a herd and I ended up sitting in the ground and they were walking around me eating. It was an amazing experience! I had my dog with me too so she chilled with me while I took photo. When I got up to leave some of them started following me!

Came across wild horses this year, last time I was in Oregon, I got off the motorcycle and walked over the a watering hole, after about 15 minutes of watching them the alpha horse came over to say hi. Once it was determined that I wasn’t a threat the rest came over and went about their day: drinking and other horse stuff. It was so awesome to see them running and roaming free and to be right in the middle of it…..Magical!

The wild horses are just amazing! Camper and his facial expression’s make me happy every single time I see him. He is a precious boy! He’s exhausted from that ebike ride! I have a business caring for dogs and have given thought to having an ebike to help exercise the pups. I like that yours in foldable and compact. Seems to do well in sand, so I imagine you can take it anywhere.

So glad you picked up an ebike and have plans to give Camper optional rides! I'm into all kinds of bikes but ebikes really open up options and take the dread out exploring where hills/headwinds may put a damper on the ride.

They are but they won't be free much longer if the BLM has their way. They did another round up in NV where I live. Every year more are rounded up and sold at auctions.

When we cook in the dutch oven, we have a chart for the number of charcoal for the top and bottom to make sure the heat is correct. But we have found lately that charcoal, varies in BTU by brands so we are making charts for each brand.

Great footage of the horses. I love the camera on camper. Very cool if you beat an egg and brush it on the top of your bread, it leaves it a golden color. You can also use melted butter and FYI with all the Japanese ladybugs that are out these days check the roof of campers mouth every once in a while they like to hide where it is warm. I did not know this until I saw a picture the other day with a puppy had a ton of them on the inside of the roof of his mouth, just FYI a little dog puppy care ok 👌🏼🔥🤠🔥Camping Russ out

Lynx has a chock that fits on the leveler blocks. Makes much easier when backing up by yourself and keeps you from overrunning when you're on the top leveler. I use mine anytime I'm backing my trailer up.
I like my Lectric bike. It is easy to make a bracket to add over sized shopping baskets or a plastic tubs. I have had good luck at tying the baskets down to the brackets with quarter inch tent rope. The plastic 12-gallon tubs at the "big box stores" work well for storage baskets on my motorcycle and bike.

My son graduates in June of 2024, Ill be an empty nester at 37. This is my dream! More than likely with a pull camper because I have three dogs but I cannot wait to go on some adventures and see more of this country.
When I back our trailer up on leveling blocks, I found using low-low 4 wheel drive works best, because it seems to be geared much lower and one can sneak up on the blocks more easily

Hey Nikki and camp, Ive never commented before but i just watched your new video and felt like, what's the better word, abliged or compelled? I think compelled because it comes from within to act and Ive loved your videos for a few years now. But abliged works too cause you've clearly worked so hard and deserve the recognition for that. Couple of hints on your bread from watching the lady that raised me make bread all the time. It is the the yeast feeding etc that makes the dough rise. They need warm and moist. Doing what you did with the bowl was great, but don't refrigerate. also putting it in an enclosed space that has a little tub of warm/hot water for humidity will increase the growth making the bread fluffier and lighter versus the more dense version you produced. Experiment with those factor to get the style you like, and will need to adjust for different types of bread if you try (like white, rye, wheat, etc.)

Camper reminds me so much of my dog, he's always got to be sleeping right under the covers with me or right next to me when out and about.
Love your smile and everyone needs to understand that you don't always smile when things go wrong, you are human like the rest of us. We all have the happy and sad, angry, confused expressions just some of us choose to smile through even theough the hard times so others can remain uplifted.

We got flooded out of our house two days after the Ohio governor shut down the state for COVID-19 in March of 2020. We lived in a hotel room for two months (after I begged the manager for 2.5 hours to let us stay there with my husband's emotional support dog, who is an angel). We only had three changes of clothes each. The bathroom sink became the laundry room, the kitchenette, the shower room and dog washing area. (I went through a LOT of Pine Sol, cleaning the sink and counter top in the bathroom 3-4 times a day!) We'd wear the same outfit 2-3 days in a row (clean undies, mind you), then I'd wash one of my outfits in the sink and hang in the shower to drip dry, then move it into the room, taping the curtain pulls together to form a laundry support, which was just about the room heater, where that outfit took all day to dry, and so on. On alternating days, I'd wash my husband's clothing. There were very few stores/restaurants open, plus we couldn't afford to each out every day. So, I went up to our garage and was able to locate a small, electric two burner. The hotel manager warmed up to us and gave us a small microwave to keep in the room. (They had to remove them all because the guests kept burning popcorn in them...). I had to blast the air conditioner in March and wave a towel over whatever I was cooking to keep the Ansel system from going off! We made do in an eighty square foot room and our dog became the hotel mascot, wandering around visiting with folks outside during quick walks. It was a very sad time for us, as we lost a lot including our savings to mitigate our home from level 3 flood water, and then put it back together again. All in all, it was not as bad as it first seemed, given that we had our blessed dog, Lucy with us and the help of our church, family and friends. It was refreshing to not have to make decisions about what to eat and what to wear. We didn't have many choices, and that was fine with us. We had plenty to worry about how to get our house fixed after a flood during a pandemic! I admire you and Camper so very much, Nikki. Please always stay safe and Camper too! He is such a good boy!
