Steamed Instant Pot Artichokes Recipe

  • Love artichokes but don’t want to wait for them to cook forever on the stovetop? Making Instant Pot Artichokes will have them on your plate in about 15 minutes (including the time it takes for the IP to warm up!)
    -----------------------------------------------FULL RECIPE BELOW----------------------------------------------------
    INGREDIENTS
    4 artichokes washed and trimmed
    4 garlic cloves
    1 lemon sliced
    INSTRUCTIONS
    Trim the artichokes by removing the tough outer leaves and snipping of any sharp thorns. Cut 1/2 inch off the top of the artichoke and cut off the stem so the artichoke sits flat on a plate.
    Place the steamer rack in the bottom of the Instant Pot or Pressure Cooker.
    Arrange the artichokes in a single layer on the steamer rack stem side up.
    Add the garlic, lemon and one cup of water to the pot. Close the lid and set to seal.
    Set the Instant Pot to High Pressure and cook for 5-15 minutes depending on the size of the artichoke. (5 minutes for small, 10 minutes for medium, 15 minutes for large)
    When the artichokes are done cooking, release the pressure manually using the quick pressure release.
    Remove the artichokes and serve with melted butter or use in your favorite recipe. Discard the lemons and garlic.

    use the edge of a spoon to scrape the hairs off the heart. They come off easily if the artichoke is thoroughly cooked. Then you can cut the heart into sections and dip it in butter.

    My aunt used to grow artichokes on her ranch. She always told me when buying them to chose ones that weren't so "pointy" at the top, like the 1st one you held up. I think you want one that's more flat/blunt but as you said hasn't fully popped open. They tend to harvest them on the early side which is why they are pointy in shape. Thanks for the recipe!

      We are always left with the not so perfect artichokes here on the East coast. There's only about 2 weeks where we get the more round, tightly closed artichokes here so I had to use what I could find.

    Exactly what I was looking for! Thank you. My dip as a child was oil, lots of lemon juice, and salt. I’ve never tried butter. I’m going to try it this time around. But I do love my lemon. Thank you for making this video.

      Oh my gosh, I've never heard of dipping artichokes in oil,. The 1st thing I ever saw my family dip it in was miracle whip and then sometime later butter. Maybe when I was visiting. my dad. In fact, I was already well in my 20s the 1st time I saw garlic bread dipped in Olive oil (with roasted garlic in there), instead of just spread with butter, and that was at an Italian restaurant when I lived in Arkansas.

    I thought artichokes had to be rinsed before cooking.

      They were rinsed before we started the video but they boil for so long that anything that could cause illness would be killed before it gets to your plate.

    You can eat artichoke stems too. They're almost as good as the heart.

      Yeah, my family always cut the artichoke stem, leaving maybe about half an inch or something. But I like the idea of cutting the other side flat, though.

      We do eat the stems most of the time but they need to sit flat in an instant pot so I cut them off in this tutorial.

      I'll do another video on how to do that later. You just peel off all the leaves and then scoop out the center (the hairy part). You can eat the whole heart, even parts of the stem if it's been properly prepared.

      No, just make sure your artichokes don't go above the fill line.

    When putting the artichokes in the InstaPot, the video says stem side down, text below video says stem side up. Which is it?

      Stem side up to prevent water from collecting in the leaves but it doesn't really matter.

    10 minutes wasn't enough for our artichokes. Sweet spot is 15 mins and 10 mins natural pressure release

      It really depends on the size of your artichokes so if they’re larger you’ll need a longer cooking time. Thanks for your tip!

      The pressure cooker option "steams" them in a fraction of the time.

    10 minutes, as directed, and my artichokes were still hard... Kinda ruined my night trying to cook them the rest of the way. Hoping another 15 minutes on High pressure will finish the cooking.

      Not to question your skills as an IP user but the seal could have been compromised not allowing the unit to seal fully or you used giant artichokes. Sorry to ruin your dinner but this method works perfectly every time when executed properly. Also, the 10 minutes does not include the time it takes to come to pressure, it's specifically the high pressure cooking time.

      10 min didn’t work for me either and I used the same size artichokes as in the video. Everything sealed properly as usual.

    Nice but you really didn’t eat the meat off the leaf, just the tip. What a waste . I open up my artichoke leaves and stuff them with garlic, drizzle with extra virgin olive olive. Yum

      Trust me, I know how to eat an artichoke but for the purposes of the video, I may have skimped a bit so I can continue to roll and not stop so I can chew. Thanks for your concern, though.

      Wasn't being sassy at all.....but I did taste the artichoke for the video....and I ate it afterward. And I never thought I would be schooled on how to eat it. But whatever. Thanks for your comment.
