HOW TO MAKE THE BEST EDIKAIKONG SOUP/UNIQUE STYLE NIGERIAN SOUP

    Hey foodie ! Edikaikong, is one of those soups that I just enter kitchen, serve it in a plate and start eating. Apart from it’s nutritional benefits, it’s a finger licking, lip smacking soup.
    ~
    Let me share some of my Edikaikong secrets with you.
    1. To avoid a watery soup, boil down your proteins till the water is completely dried off.
    2. I usually over season my beef or goat meat because I do not plan to add any seasoning cubes later in the stew.
    3. I fry my pepper till the water is dry to avoid a raw pepper taste.
    4. Trust me when I tell you that this is not one of those recipes you can be playing with plenty salt and seasoning o. One of the secret ingredients is crayfish! Crayfish is very important in this soup, so make it rain.
    4. Apart from blending my pepper with crayfish, I usually add my crayfish last in the soup and allow it to steam for about 30 seconds.
    5. I use more ugwu than water leaves
