Food Kart yeah, there are dirty and clean vendors all around the world. As long as hands are clean, it should be OK. You won't die from dirty hands but you may get sick and then die so the least one can do is wash their hands, keep their finger nails clean and even remove personal jewelry such as watches and rings.
