    Diamond grit files should only be used for touch up and sharpening the hook. All other sharpening should be done either on a wheel or a belt. Also, no demonstration of paper cutting, which would have demonstrated the deficiency.

    That's the worst sharpening demo I have ever seen. We can hear the vibration in the blade from the first stroke of the diamond hone. The blade is too far from vice.
    Next, you're honing away from the edge, Unless you know something that everyone else doesn't, that's wrong and worsens the wire edge or burr. You then also 'remove the burr away from the edge - all wrong in conventional technique.
