  • The E61 group is a classic and provides a unique level of control with its lever design. So in today's re-release I'm brewing up a single origin blooming espresso on the Profitec Pro 600.

    I like the Scott Rao 30 second bloom. Have my pump switch on hair trigger with the brew arm so can stop pump and keep pressure on the puck. Start pump til 2.5 bars of head pressure is developed, then stop pump for 30 seconds while grinds soak up water. Then proceed with pulling the shot with a scale under the cup of course. Great shot every time.

    I'm always curious to see others techniques on getting the portafilter screen out! I jam a spoon into one side and that makes it pop up on the other side but wondered if anyone else had a better way.

    How's the new DF64 gen2? Seen a few reviews, but would be great to hear how you've got on with it, particularly given you've also had experience of the 83 and 83v for perspective. Trying to choose one of the three to pair with my Flair at the mo for espresso (often medium roast, sometimes light)... Difficult!

    This is the machine I have, I love it, but I have a hard time getting great microfoam with my 2-hole tips at any pressure, actively trying to figure out what I'm doing wrong, but it vortexes great and all..

      You might benefit trying a single tip until you get the hang of it.

      I have the same machine and struggled for a while foaming milk. Treat the suggestions you find online as a starting point; you'll definitely need to experiment to find what works best with that steam tip/machine (it's annoying, but don't give up). What really helped me was getting the air in very quickly (within 5 seconds; this requires being a little more aggressive than most tutorials seem to suggest) so that most of the time is spent swirling the milk (breaking up the air bubbles you injected in the first few seconds). Also, I found that it really is important not to bury the steam tip after you inject the air. Raise the jug the minimal amount necessary to stop the injection of air (this creates a very effective/deep vortex which really textures the milk). Hope that helps. Also, I switched to the 4-hole tip; I don't think that was crucial, but it does help. Good luck!

      My machine didn'T come with a 4-hole tips, and I got one from the place I bought my machine. Did you have to remove the plastic inside the steam wand to make it fit? Mine doesn't fit without doing that so I haven't gone that route yet

      @@pourliver The 4-hole tip I purchased was manufactured by Profitec, so it just screwed in like the 2-hold tip that came with the machine. That was good that you didn't try to make it fit by removing the plastic tubing: the tubing is an insulator that keeps the steam wand cool to the touch -- definitely don't remove it! The good news is that you can get great results with the 2-hole tip: it just takes a little longer (which is good when you're learning).
