As a Thai, I recommend adding an egg on top of the dish (can be fried or soft boiled). It pairs well with prik nam pla, and adds creaminess to the dish. For fried egg I prefer the Thai style (sunny side up but with crispy edges).

Tbh I think sea beans might be a big reason why you like this stir fry so much - while I don't discount the prik nam pla adding a ton of flavor, sea beans on their own are also pretty flavorful and bring salinity to the dish (anyway, I guess this is my cue to go forage for them this weekend haha)

For the Thai style stir fry, Iâd recommend fresh chopped garlic together with chili instead of ginger. The aromatic flavor and texture of garlic go so well with chili every time.

Ngl as a Thai I recommend everyone to try prik nam pra(fish sauce with chilli and also they are prik nam pra manow which add lemon and some add garlic too) Itâs soooo addictive. Just make sure you guys keep check on sodium consumption because this thing scream SODIUM lmao

I have just recently discovered these videos by this informative cook. Heâs really quick and simple. I noticed that he loves msg and I learned to use mayonnaise for oil and marinating đ . Normally all my stir fry has oyster sauce, soy sauce and quality fish sauce, along with lots of fresh Thai peppers.
Made this for lunch and it was SO good! Healthy too, this will be a go-to meal prep. Thanks Ethan!!

New subscriber, I made this over the weekend and it was so super delicious, I used french beans because I cannot get sea beans, I added few cloves of garlic with the ginger to saute the vegetables, we cannot stop complimenting this dish, the sauce was heavenly divine. Just finished making this. I used snap peas and added some sugar to the prik nam pla, and god damn that hits! The dry brined chicken cooked so well and gave amazing color and depth of flavor.
Some place in Thailand will put the squeezed lime into prik nam pla as well, I guess it will become chewable after a couple of days in there. And also, adding garlic or shallots in prik nam pla is the bomb. When the prik nam pla is good, I could just have a crispy-on-the-bottom fried egg with rice and prik nam pla (with tons of 'marinated' garlic/shallot)

Pad kra pao is honestly one of the few things I could eat multiple times per week. Not getting tired of it but nice to have something similar I can throw into the rotation. đ€€

You might also wanna experiment with recipes with the 2 other types of basil found in Thailand: lemon basil,..but especially holy basil which can be used as a regular ingredient, but is also a fantastic topping when deepfried!

I never realized how close Vietnamese and Thai food were, it makes sense though. We use the same exact sauce with maybe some regional varients. It's the staple for any vietnamese meal.

I've been obsessed with bun cha lately which is probably right up your ally. It's a Vietnamese rice noodle salad dish with nuoc cham which is basically the same as prik nam pla, pickled vegetables, lettuce, a bunch of herbs, and pork but I add whatever meat I'm feeling like. It's the perfect summer food.
Ethan thank you I love this. This is so simple. It reminds me of learning how to make my favorite Thai dish, Pad Ga Prao, which is pretty much this with oyster sauce. Completely devourable.

I appreciate you using metric measurements, just one small advice: we typically measure liquids in units of volume (ml), while the solids are measured by weight (g) and it is not unusual that they are mixed, e.g., x g of rice and y ml of water
This reminds me of pad kra pow and can confirm is super addictive. If you canât find Thai basil, I find using regular basil and some dried tarragon (for the aniseed flavour) works very well

Thai basil is well worth growing on a patio or in the garden. Adds so much flavor at the end of the dish.
That looks fantastic! I love fish sauce and oyster sauce. They are pantry staples for me bc they make everything betterđ. I can totally relate to eating the same thing over and over. I make both stir fry and fried rice constantly bc it's super versatile and I love it. I started making these fried egg patties (kinda like what you'd get if you ordered egg foo young) served with gochujang and we ate them for like 2 weeks straight. Yum.

Looks amazing Ethan - for what it's worth, garlic + chili as the initial aromatics will get you closer to that pad krapao flavour profile than ginger + scallions. Samphire in that flavour profile sounds awesome though
I make shite stir fries all the time. Sometimes they're better than others. Sometimes I follow a recipe to the T, sometimes I improvise. I can't even believe how fucking delicious this was. I'm familiar with prik nam pla, never made it before, have had it plenty. Didn't expect this incredibly fast recipe to blow my goddamn mind. I didn't even follow it exactly. Ground pork and a mix of veg, browned the pork real good and added the veg to steam with it. That damn fish sauce lime combo is a no brainer, classic Thai flavors, but like, why did I never seek this out before??
I stopped watching cooking videos after bon appetit blew up a few years ago, and all that Alison Roman shit and whatever. Your videos have rekindled my interest in cooking awesome shit at home. Appreciate your sweet, down to earth, relaxed, honest style a whole lot.
