  • Julia Turshen is the award-winning cook book author of Feed the Resistance and Small Victories, and in her new book, Now & Again, she's showing readers what to do with leftovers. In the book, she breaks down seven things to do with leftover rice. And in this video, she's showing us one of them-how to turn that leftover rice in to a warming rice pudding with fruit.
There are plenty of recipes out there talking about how to make fried rice with your leftovers, but few showing you how to take that takeout container in your fridge and turn it in to a super easy dessert. Julia, named one of the 100 best home cooks of all time by Epicurious in 2017, is your go-to guide if you want to learn how to make great dishes at home with ease and a little (but not too much) effort.

Got leftover white rice? Try this, amazingly simple and delicious: take one cup cooked rice, four cups chicken broth, a handful of baby spinach leaves and two tablespoons of tomato paste. You have tomato rice soup with spinach in about 20 minutes and it tastes fabulous.
I've also been known to put cooked rice in a meatloaf instead of bread crumbs. Try it!
