I want to thank you for being an amazing teacher. I have already learned so much from you. I am starting to mill my own wheat berries and I’m having so much fun. I have made your pizza dough and just recently your sandwich bread. Oh my it turned out perfect. I love the window pane example of when your dough is ready. It actually works whoohoo. I never knew this and it’s obvious I never kneaded my dough long enough. I just made the sandwich bread and I milled my berries in my vitamix flour container. I kneaded 30 minutes n got the window pane effect. The bread was spongy tasty and light. Smelled amazing!! Thank you so much for being an amazing teacher. Can’t wait to make all of your recipes. I made fresh grain biscuits this morning because I already had the white flour biscuit done pat, they were good. Then I made your cinnamon bread , I think they over proofed in the end but turned out fine, we are eating it up. It looks like i am going have to put that storage bread box to use and bring it down from the top of our fridge, providing my hubby can let the bread last long enough to keep a couple of days. I watched several videos and you are the best for me.

I have Muscle/nerve issues that i cannot do alot of kneading.. and atm I cannot afford a good mixer, I did buy a good mill when i had the opportunity so I have the big Nutrimill probably just like the one you returned :) and i love it!! but until i finish paying for my freezer and the stove i had to replace i will have to wait for my mixer... but what i do... (so i don't die) is i have a $5 bread machine that I found at the thrift shop, and i use that to do my mixing/ kneading on the dough only setting, I have never used the baking cycle.. because i don't want funny fat square bread... and i I do have to help it a little .. to incorporate all the flour (with a chopstick) but once it all moistens it is good to go. It doesn't quite get to windowpane level, but it turns out dough for good soft bread anyway. I just thought i would mention this for anyone else who might need to buy appliances in stages for budgeting reasons..
Great idea! Thanks for sharing! Sometimes if you run it on 2 kneading cycles, it will give you a windowpane! But, if it's giving you great bread, I wouldn't change a thing. Thanks for watching!
yes i usually cycle through once befor adding yeast for an autolyse cycle and then again after adding the yeast.. it gets pretty close to window pane.. close enough for my rolls or sandwich bread... might try another cycle for pasteries@@GrainsInSmallPlaces thanks for the thought :) I love your channel, very inspiring !!

Hi Cara (sp). I absolutely love your channel. l just got my NutriMill Classic and am using your sourdough tutorial now. I really, like farro and know that you can mill this. Yay! I am excited for you! Farro can actually be one of three grains depending on the variety. It can be spelt, emmer, or Einkorn or even a blend of them. I agree it tastes delicious! Thank you so much!

Just an FYI I would have very much liked to have known about: the Blendtec Electric Grain Mill (cost as of Dec. 2023 about $269):
I did a LOT of research on electric mills before choosing the one I chose -- but strangely enough I learned about another mill, the BLENDTEC ELECTRIC MILL, only AFTER I purchased (but did not yet have) my new mill. To be honest, had I known about this other option I would have gotten it -- (formerly Ktec, Blendtec). electric grain mill. Although a NO-GO for people who can't handle a really loud machine. It MAY be the loudest of all the grain mills! For the short periods of time it takes to grind the grains that really is not a big concern for me. There are three reasons I WOULD have chosen the Blendtec electric mill: (1) it is pretty small and even smaller for storage; (2) although it makes only ONE grind of flour, it makes a finer grind than any of the other mills from what I can tell; and (3) the reason I am not concerned about getting an electric mill that can do coarser grounds (for things like cream of wheat, polenta or grits) is because I know I can EASILY do the coarser grains with my 24-year-old Blendtec blender -- which I have until now used for 2 YEARS for home-milling flour for my breads, etc. The only concern is that apparently the rubber ring/seal around the top of the Blendtec electric grain mill container can break or whatnot. Had I found out in time to buy the Blentec grain mill, I would have gone ahead and bought at least four extra rubber rings. I doubt they cost much.
ONE UNKNOWN for the Blendtec which could have been a deal breaker for me: I do not know if it can grind for instance all the grains and beans in Ezekiel bread. Then again, I could grind those in my Blendtec blender.
All that said, there is no real buyer regret here. I got the Wondermill, which can we stored with the flour canister sitting atop the mill portion. It is NOT very wide and fits very easily atop one of my 5-gal. food buckets in the kitchen, where I have all the room in the world ABOVE the buckets. I was also really glad to purchase from BreadBeckers.com which I consider a super awesome company with high integrity.

Yes, I'm sure they would too -- but I'm happy enough, really. By the way, the reason I would have ordered 4 extra rubber seals is because one lady who has had her Blendtec mill for 17 years had to get replacements on the seals four times. It's not like they break really frequently. I'm sure my housemate is happier with the Wondermill as the sound of the Blentec might have really gotten on her nerves as she is someone with really sensitive ears, so I'm happy to quit while I'm ahead, haha.@@GrainsInSmallPlaces

I’ve never been involved w BLOGS. You will be my FIRST once my kids show me how it works. 🥴 I’d like to see what you have there. Would you try a different cracker recipe in addition to the one you have? I asked my grandkids to buy for my birthday the rolling pin and mat you used. Recently I watched a video from Jeff Kahn making WW CRACKERS w THIN BATTER poured onto a silicon mat and then baked; no rolling out dough. I thought you might enjoy converting this idea to fresh grains for a new video. Also, you mention some times to use honey in place of sugar if we choose. I do have 3 different cracker recipes on there- butter crackers, graham crackers, and cheese crackers.

Very new to milling my own flour but obsessed already! Thank you for sharing your wisdom. I have a question about storage as I have read some conflicting information. Most information does say that once milled it does start to lose its nutritional value, but i read that in a sealed container, in a cool dry place it will last up to 20-30 days. I am doing a sourdough starter, but that needs to be fed, it doesn't make sense for me to mill every day just feed my starter. Is it ok to have several cups on hand if I am using it frequently?
For feeding your sourdough, I like to keep a bag of fresh milled flour in the freezer, that will be the best option to keep the most nutrients. But, yes, the nutritional value does decrease as it oxidizes. (Mostly the vitamin E)
How fine do you mill your flour? And do you sift or use the entire wheat berry?
I have a mockmill attachment for my kitchen aid and my flour doesn’t look as fine as I think it should using the finest setting but maybe I’m comparing too much to store bought flour

Question i see you travel how do you get your grains
I have to get creative! Whenever I am in an area when I can get them in person, I do that in bulk! (Yep, we fit a few of those 5 gallon buckets in here, lol) I have also ordered online when needed, even Amazon. Hope that helps!

I have a question about Sue Becker’s book you list in this video. I purchased it and noticed the ingredients are listed in milliliters. I use grams to measure my ingredients. Any clue why she does not use grams for volume?
