    My roots is from Pasil, Cebu and I remember my grandma cooks delicious nilarang. She uses unripe tamarind fruit and cooks the whole fruit (including skin). Not sure if black beans and iba (kamias) were included. The fish used was always trigger fish (pakol). This fish has a tough skin that needs to be removed before slicing but when cooked it still retains its form. Unfortunately this fish plays an important role in the marine ecosystem since it eats crown of thorns.

    Kiampaw is stingray. Mostly white meat fish yung ginagamit sa nilarang I think.
