If lime plaster can burn your skin, glasses or goggles are probably a good idea too--especially if working over head.
Also, can this technique be used to seal an exterior?
Yes goggles also recommended! I always tried to work with it eye-level or lower, but goggles are definitely a great choice in any case. You can seal outdoors with it but you need to be very careful with the curing! Outdoor conditions will affect the final result and longevity. However, exteriors are best left with a textured lime plaster, not smooth finish in order to slow down water movement and minimize erosion
