    I made this last night, my husband is Palestenian. I am Latina but my mother in law taught me how to make it. It was the first dish I had with his family when I met them. Nostalgia for sure ❤

    The rice is supposed to be a bit yellow. You cook the rice with the meat stock, not plain water. And the meat you should have sauteed it to get rid of the blood before adding the yoghurt liquid.

      I make the meat stock separately (and yes brown the meat slightly!) until the meat is half cooked cooked and then add some of the broth and meat to the Laban and jameed mixture. The rest of the broth goes in to make turmeric rice. Interesting to see his way too though.

    Make sure to boil half carrot and 1 small onion with meat plus cardamon pepper and cinnamon stick

    We usually boil the meat separately first with some spices, then save the broth and add that into the jameed which has been boiling, we add maybe a cup or 2 of the meat broth to dial down the salt content of the jameed… then add the meat itself to the jameed to boil. That way the spices like cardamom, bay leaves, sweet clover, etc blend. But this is good too!

    If you want a more authentic version of your mansaf, ditch the 3eeran, use almond instead of pine seeds, use korkom with rice, add ghee to gameed, put gameed on the margoog before you put the rice, add little ghee to the gameed/lamb, eat a chilled white onion with the mansaf, and finally say besemmeAllah and eat with your hand (make small mansaf balls) 😊

    As a jordanian i appreciate the effort highly!!! Even though you should boil the meat with only water before cooking it with yoghurt. This ensures a cleaner taste and preserve the meat taste only to the meat without taking over the sauce taste.

      I doubt it, there's really no other seasonings and a lot of the flavour comes from it, swapping it out would change the flavour profile

      Definitely there are spices And arumatics... My mom adds onion, bay leaves, and black pepper to the meat while it cooks, she adds just a tiny touch of tumric on the shanina (the yougert thing idk what its called in english) and maybe other spices that i dont remember rn
      few years ago my mom discovered pre packeged mansaf spice mix, and she use it very often till this day
      I love my mom's mansaf, good luck with you eid cooking :D

    This is one of those weird dishes that when you taste it the first time you really hate it, then someone else cooks it and you give it a second try and you absolutely LOVE IT. But then you try it again by someone else's hand and it never is the same. I've tried Mansaf multiple times in my life but no one has it made it like the one my ex-coworkers mom made. The same goes for goats head stew from Hyderabad that my Grandma made. No one else has been able to achieve her perfection.

    This is so similar to kashmiri yakhni. The difference is the dehydrated yoghurt, we don't add that. And we add fried onions and some spices to it. No chilli. I love ittt

      There's meant to be desert spices usually, it's called "hawayij mansaf" but I am not sure why he did not add them or mentioned them. They're very important.
