Actually, the head and ears of the pig are the main ingredients of Sisig. And originally it was called scrap food because it came from the offcuts of pork from the US Base in the Philippines in the 1970s....

As a kapampangan, we use pig's face, ears and chicken liver as the main ingredients. We'd also grill it before chopping it up rather than fry it. Grilling gives it that smokey flavor and the pig parts don't lose much of their juice. We never put mayonnaise in it and we never mix soy sauce directly. Instead, we make a dip with a mix of calamansi and soy sauce.

Watching your vlog, I started craving Sisig na. Yummy Yan
I’m from Pampanga but I never heard anyone here putting pig’s brain as an ingredient. Our Sisig is basically composed of Pig’s ear and face, chicken liver, thai chilis (optional) and calamansi. That’s it. How to cook it the proper way? Grill the meats. After grilling them, chopped them then mix them with all other ingredients I mentioned, with salt and pepper to taste.
It’s a fusion na po parang dinakdakan style na ata sya...
