AND A TOOP SERVICE ON THE SIDE WOULD BE HELPFUL. Please don't get "hung up" on having it centered...save the one set of cabinet and drawer for your oven possibly rather then to LOSE both sets of drawers and cabinets...Just a suggestion...this is what I'd do.
I’d put a tower unit on the wall between the windows for a twin oven, grill and microwave and next to it an integrated fridge freezer. You’d keep your storage that way.
That hob (stovetop) is massive! But I love the downdraft exhaust, no ugly overhead unit to hit your head on. Don’t ask me how I know! Hopefully Billy will be able to install this fairly soon, he has many irons in the fire but family comes first. Enjoy the rest of your weekend and we’ll see you on Monday!

You could still make a new cupboard behind at the wall and refrigerator in that closet area. I know it's not ideal but you will lose a lot of prep space if you use the island for the hob. Just an idea. It would be easy for Duncan and Billy to fix into place and you will have plenty of prep space and extra seating.
Sadie I took a look online and it looks like you may loose all the storage under that center cabinet as the extraction part loops down and the out the front of the cabinet to recirculate the exhaust. This is an induction cooktop, if you presently have an induction hob then you will already have the correct type of cookware. If not you will have to see if the cookware you have is compatible with an induction hob. It looks smashing and I am sure you will enjoy cooking on it.
luv my induction portable 2 burner “hot plate”. You need correct pans. I traded my whole set with my daughter in law luckily. They use propane. I live in a small studio home by myself so only need 2 hobs. But took it to another house when they had a big dinner party and needed more hobs. 🦌💌❤️🙏

Also, if you have the fridge in the room off of the kitchen, everything will be readily accessible. If the area that is already cut out is a problem, turn the top over, then put that area at the other end. No one, save a few of us, will know. ❤

The hob is great😀 it will have so much cooking space and the extractor in the middle is such a good invention . It’ll keep the space bright and airy😊 You moms ideas about the built in oven and refrigerater and I hope you have space for a full lengt pantry cupboard that also goes up to the ceiling. I have those three next to each other in my kitchen and it gives so much room. It's such a tight turn on the steps. There might still be a winch outside a window somewhere for bringing in furniture? It did look nice when the upstairs camera switched on.
Extend the length of the island by adding room in the centre- the drawers can stay, the hob will be centred and room in the far side for some extra bench space and storage: Maybe a built in spice rack or lazy Susan to cover the addition behind the hob.

If you go to your local hardware store you can buy 3 or 2 tier sliding thinner drawers that will fit in the thinner space down the side and use the other space for larger drawers for pots. I put in the 2 tier sliding rack and its good for oils and spices just where your cooking .just a thought???
Have you considered just getting two new blank open cabinets and replace the drawer cabinets which can be used elsewhere in the kitchen. That way, there will be less cutting and you would still retain all your drawers. If you put the drawer cabinets on the wall behind the cooktop, then it can be a handy place to put all the things you would need when cooking (ie: utensils etc).
Lovely to see you cracking on Sadie. Hopefully you’ll only lose one drawer if you place the stovetop all the way to one side to save some space. Billy will have a think and make it right. 🤞🤞

You could just leave the drawers and semi attach so they couldn't be opened, that way your design will still be there, also if access is needed them the drawer can be removed. Place the unit off center so you'll only lose one or two drawers
The Ciarra One is a great looking hob. The downdraft may be directed out the back side of the cabinet or extended to the toe kick area below. It appears to have a liquid spill collection space and drain below. The place where the oven was to go could be repurposed to a pan storage drawer or drawers. The oven could be moved to a wall mount unit with a microwave above and a warming drawer below.

Sadie - The hub is huge and beautiful, BUT have you considered moving/reconfiguring the spice draw from the other side of the island to the hub area to avoid loosing or cutting into those lovely draws? I’m not sure if that possible but thought it was worth suggesting. 💛👑💛🙏🏼💛🥰🤗

I would put the cook top on the opposite side and thus save your drawers and oven space that is already prepped.
