Pan Seared Scallops, with Ivo's Marinade. Delicious!!

- If you love seafood, you are going to absolutely love these scallops!! The marinade I use is key and these cook up so quickly, ready in no time!! Enjoy - they are delicious!!

Ivo’s Pan Seared Scallops
Ingredients
• 9 - 12 extra-large scallops (or 24 small ones)
• Juice from 1 lemon (or ¼ cup - 1/3 cup lemon juice)
• ½ cup olive oil
• 3 cloves of garlic, minced
• 1 ½ TSP Old Bay Seasoning (or just use paprika and black pepper)
• ½ cup butter (or more if required) for frying
Process
• Prepare marinade: put lemon juice, olive oil, garlic and old bay seasoning in a bowl. Mix.
• Add scallops to the marinade and let marinade for 10 - 15 minutes at room temperature.
• In a cast iron pan (preferred, but cast iron is not essential), melt the butter and add 2 - 3 TBSP of your scallop marinade (take it right from the bowl).
• Now add your scallops and cook for 2 - 3 minutes to sear the one side
• Flip them once, and sear the other side by cooking for 1 - 2 more minutes
• Remove, and serve hot. Enjoy!! Delicious

Suggestion…portion the evoo into the glass measuring cup first. Then you don’t need to dirty the 1/2 cup measure.
