- The spectacular Hotel Eden Rome (www.dorchestercollection.com/...) has just re-opened after an extensive 18-month renovation. This included expanding and re-doing both restaurants (Il Giardino and La Terrazza) and building out a whole new kitchen. Here's a tour of the new kitchen (which has amazing views of Rome through big windows) from Hotel Eden Executive Chef Fabio Ciervo. Also check out my interview with Chef Ciervo, here on CZcams. Chef Ciervo designed the new kitchen and explains how it helps him bring the hotel's five key elements of food to life in everything he serves. Those elements are: innovation, well being, ingredients, flavor and art.

The chef was lucky, they gave him the space and let him design it himself so it's exactly how he wanted it. I like how it has windows and a view, most kitchens are closed spaces. The food is amazing, thank you for reminding me of that trip.

What brands of equipment did they use?
I don't remember specifics but the chef personally designed the whole kitchen so I would say the best you can get!

What type of commercial kitchen?
An Italian type?
The passages between the equipment is too narrow.
They have limited space. When you design your restaurant kitchen you can make them wider!
