      When I saw Roy Choi I knew he was gonna miss nearly everything. Roys recipes are deeply complex. This one wasn't even that bad. He'll make a 20 ingredient sauce that's just the base of his 30 ingredient marinade. Watch his Netflix show.

      He's not wrong, mirin is technically an alcohol. Its really sweet, and fermented, it's a cousin of sake. That's where he's getting the fermented ,sweet flavour and that umami flavor he originally thought was soy sauce.

    The fact that Chris basically nailed the taste and appearance while missing half the ingredients speaks to the fact that the original dish had a ton of useless ingredients in it that didn't contribute to the final dish.

      Honestly, I never found his "super tasting" ability all that impressive. They put food down in front of him, like a black garlic shitaki Ribollita.
      The black garlic and shitaki is easy to recognitize. Then he just uses the common ingredients of Ribollita. leftover bread, cannellini beans, kale, cabbage etc. And then he just tries to figure out the details of the Ribollita. Like does it have chard or just celery? And usually he gets v those details wrong. Sooo... I don't think he is so much a super taster as much as he just uses process of elimination.

    The initial tasting is amazing cause Chris always says exactly the right thing then never goes for it. He picked out an Asian fusion element in the beginning and never went for it. This is one of the hardest shows ever but Chris’s good attitude is key.

      @@travollan 100 percent. A ton of unneccessary ingredients. Now we know the beginning of why these dishes are so expensive. These tacos maybe need 25 ingredients, but here we have like 50 listed? You can get away without using two different oils, vinegar, lemon zest, etc.

    He did great considering the ingredients. Like the man has the credit he deserves. Also, one suggestion. Since he added a pre-made hot sauce, you could "tick" some of the ingredients that the hot sauce already has, cause he technically got it right (jalapeno, vinegar, pepper etc)

    I feel like this episode was so difficult, it kind of took a lot of the fun out of it. I think this concept works better where you have a dish with more separate ingredients rather than something like a sauce with a million ingredients all mixed together.

    When the ingredients are at at 68% but the taste is at an 87%, I think that says more about the recipe itself and there being a lot of unnecessary complexity thrown in for complexity's sake. These are always frustrating to see Chris struggle where some element of the dish has 20 different ingredients, but it seems like at least half really aren't actually doing anything for the dish.

      delani taylor Sorta. Like, Chris can tell when something is missing, or the flavor isn't quite right, but in actuality, you can leave out a lot of ingredients in long recipe lists and get something closeish.
      In my culture (im sichuanese) you'll often find multiple versions of a very classic recipe that differ ever so slightly with technique and ingredients but turn out super similarly, but if you know enough you can taste and see differences that nail down where things are different.

      And then some ingredient combinations can have similar flavors to other ingredient combinations.
      That's why stripped down recipes do so well - just a few ingredients, about 80% correct on flavors, even if it's just hitting the strong ones.
