      I highly recommend it, Id say dont worry to much about the internal temp but cook to when the skin is crackled completely but not burnt. If your cooking it hot cook it for about an hour to an hour and a half

      @@jackeladventures1419 can I get the same results in an oven? What Temps were you cooking at again? And is it safe to let the pork sit in your fridge uncovered for 48hrs?

      @@cra231 220 degrees C in the oven is nice and hot and will give you good cracking, If your cut is quite thick, you can turn it down to 180 after an hour to make sure the crackling doesn't burn and it cooks through.
      You can leave it uncovered for 48 hours, no issues, which was a shock to me when I learnt it. I have done it a few times and for pork belly and pork roast and it really does make a huge difference.
