Make your own Creme Freche. Take some whipping cream (35%) Pour it in a mason jar. Add a couple spoonfuls of plain yogurt with ACTIVE Culture bacteria. Must be active. Check the ingredients. Cover with a small towel and leave on your counter for a day or two. Stir once in a while every couple of hours. When you see it thicken up pop it into your fridge. After another day in the fridge it should be ready. It takes a while to make, but it's really nice to try.
Jamie, you're a genius, i love you. i would be grateful if you'll mention a vegetarian alternative when you use meat :) what i usually do is just dropping the meat off from your recipe.. what else could i add to enrich the flavor?
there aren't really any decent meatless substitutes for bacon. it's like having a fruitless substitute for an apple. that being said, it would be fine without, but more than a little bland. I would put some red bell peppers and/or some mushrooms in it. if you're making a smaller batch, maybe some knobs of goat cheese on top when you're serving
Rochelle Shister I tried mine with some mock char siew which is easily available in Chinatown. seitan or mushrooms work well too, just gotta up the oil.
it will be better if you put some black pepper with the bacon while frying it, and also you should not take the pasta for so long in the pan while the heat is still on or it will overcook, just shut it down tha heated pan is enough to melt the butter..
There's enough salt with the bacon and cheese. Plus, he used some of that pasta water, which was already salted. He could have put some pepper in there though.

I am sorry but there are way too many fats in this dish especially since adding cream will only ruin the dish. We do not add cream to any bloody dish we make! Come to my place jamie and I'll make you a pasta

I made it on my channel and cream does not go in this dish. Its a cheap italian dish I grew up eating,its 3 simple ingrediants onions,peas,tomatoe sauch and ditilini pasta ,everyone is making it different its not the same. I confess myself i added crispy bacon,but not supposed to.oh well had to shre when i saw your comment,lol' sorry

u could use joghurt
make your own! 1 1/2 teacup of whipped cream and 1/2 a teacup of yoghurt. mix it well and let it sit in the fridge for 6 hours or the whole night.
Just don't use it.. it ruins the dish :D
