Taste of Herbs: Astragalus Chai Recipe

Because chai takes about an hour of simmering I love making chai tea on the wood stove. Very energy efficient!
For those of you without a wood stove you might prefer using a crock pot for this chai. Simply put all the ingredients in a crock pot and leave it on low overnight. You'll wake to the spicy warm smells of chai tea.
What you'll need...
10-15 small slices astragalus root
2 tablespoons of codonopsis root
2 tablespoons of ginger root
2 tablespoons dried orange peel
1 tablespoon of cinnamon chips
1 teaspoon of peppercorns
1-2 cardamom pods
3-5 allspice berries
1/4 teaspoon of cloves (about 3-5 cloves)
1 and 1/2 quarts of water
Place all the ingredients in a pan.
Bring to a boil.
Simmer for one hour.
Strain.
Add milk and honey if desired.

Wow this is wonderful! I made this yesterday minus the codonpsis because I don't have any (yet!!) but this was SO good. I used to drink Starbuck's but since cleaning up my diet I have not had it, and I am avoiding caffeine so this herbal mix is so good, better than Starbucks!!

MountainRoseHerbs DOES sell A Chai blend under "herbal teas", but it is not Rosalee's personal blend which looks much more medicinal. Chai is just a spiced tea and can be made a million different ways.

Wow that's a lot of dry herbs for 2 servings of tea! I too love Mountain Rose Herbs but rarely order from them because of high shipping cost.
I made something VERY close to this this morning, and it was too much ginger! Whoooo! I love ginger, but I couldn't taste the other spices. I wish I had thought of adding the orange peel, I love that stuff.

Chinese don't often use orange peels. They use tangerine peels in Chinese medicine and daily cooking.

If you wanted to make a quart jar sized batch with all these ingredients, could you chop up the astragalus or cut it with scissors to get small uniform pieces? Or is it to tough to do that? Also, could you provide the recipe in "parts" to make it easier to resize it?
Hey Shannon! Astragalus is quite hard and would be difficult to cut into smaller pieces. You'd be better off getting the cut and sifted form of the root if you are looking for a more uniform blend. Unfortunately, we don't have the recipe available in parts. The ingredients are mostly in Tablespoon increments so you can factor the parts a little more easily. I hope that helps, thanks so much for tuning in!

Hi there! I would not recommend reusing herbs more than once for medicinal needs. However, if you are just enjoying the flavor of the teas, it is fine to reuse a time or two. I often resteep my chai if I am sipping troughtout the day. I hope this helps. Warmest. ~Alieta
roots are classically boiled for hours and a few times.
For maximum effect though use a low boil and long time once.
How do you use astragalus root powder? Or how much of it?
Hey Yoli! Many people will make capsules with it or even add a little to smoothies. But if you prefer to drink tea, the cut or the sliced version may be better for you. We unfortunately can't offer dosage recommendations on how much to take, but if you are planning on adding this to your lifestyle, we recommend checking in with a healthcare professional to determine how much would be safe for your specific needs.

Hi there~ Great question! Chai is a tea normally made with black teas, steamed milk and sweet spices and is based loosely on Indian recipes. There are many versions and variations and it can be made without dairy, but it usually has a warm, spicy flavor with herbs like ginger, cardamom, cloves, nutmeg, cinnamon, etc. I hope this answers your question! ~Kori

Chai is literally the word for tea in hindi, from the chinese cha, meaning tea. Chai tea means tea tea. Indians prepare tea with sugar and milk and spices, they just call it chai tho

Chai means tea in Hindi. "Chai tea" means "tea tea". This recipe has no tea in it at all 😂

That's not chai ! If you don't have tea and milk in it, that's called qava .
