      all hogwash, pressure cookers are safe, most have 3 safety valves, ALL 3 would have to be clogged up 100% to even come close to exploding.

    Make sure you take the temperature of what the oil is at and cook at a lower temp with pressure cooking. KFC or any fried chicken chains using pressure cookers cook at a way lower temperature than your usual 350 or higher degrees with a regular pot frying. I would cook at a lower temp but longer cook time with the right, safe use at home pressure cooker.

      You look at any KFC restaurant video, that's how they actually do it.
      Only the original flavor is pressure cooked. The spicy flavor is deep fried in an open fryer.
      The one thing he got wrong here is the initial marinating is not done with dry spices, it's a wet mix.

    I’ve cooked at kfc after high school for a few years but our chicken never came out that delicious. Quan’s fried chicken game is 100/10. 😂

      kfc changed their cooking method, they cook at a lower temperature, lower pressure and for a shorter amount of time which is why original recipe is rarely crispy now.

    Pro tip: Try blending the spices and seasonings before adding to the flour for better distribution. Not only does it produces colorful specks of goodness but the flavor will be enhanced but will be so much more consitent!

    The reason we don’t use pressure cookers at home is you create an oil bomb in essence. You can buy catering pressure cookers that can be used at home which are totally safe.

      The gaskets aren't designed for frying in oil and the pressure is too high. In the old days you could buy a Wearever Chicken Bucket which was a low pressure oil fryer. I'd hate to see someone injured trying this out with an unsuitable pressure cooker.

    when I worked at Kentucky Fried Chicken/KFC the chicken went into the spiced flour then into the fryer at 375 open top until brown, then the top went down, the heat turned off. The chicken cooked with the residual heat while under pressure. 8 min I think?(it was over 40 years ago)

I use a pressure cooker for my beef but never frying chicken in oil..i'm scared like a mo fo. thanks for sharing i will try to fry chicken since you shared your video. I love fried chicken and juicy plus I see it's fully cooked through the joints and the skin is NOT burnt...

    My only comment is that with a small cooker and so much oil there was a much higher risk than needed for that to explode.
    If you want to do this at home, use a large cooker, with a pressure vent, and you only need 2-3" of oil let the rest be air space as air compresses (causing the pressure) while liquids will not.
    Having the vent that releases at a specific pressure not only is big for safety in this case but allows all the moisture and steam to excape during the cooking process leading to a better product.

    Bro. Don't use water to batter your chicken. It has the opposite effect of a fat. It doesn't hold onto the flour upon the second dip it washes it off.

    modern pressure cookers use silicone seals which are good for 500+ degrees, way above the 350-375 degree oil temperature. however no modern pressure cooker will say in it's manual that it can be used for pressure frying, purely for legal reasons. a pressure cooker full of oil is no more of a bomb than a pressure cooker filled with water, in fact the oil-filled cooker won't build up any pressure unless it has food in it containing water that will turn into steam, creating the pressure.

    Quang, I've been trying fried chicken for years know, looked al lot of YT vids. I even copied your sweet-sour sauce. Let me tell you one trick I've learned and is really good...
    Don't use 100% flour but use a mixture of 70% flour and 30% corn starch. It really makes a difference.

    Looks great, wont be like KFC because slightly different ingredients inreal original recipe, bkack and white pepper for one, had msg which back then was not a herb or spice, one a reporter found on a piece if paper put in a journal was rough draft. Your recipe works, i did add half white pepper but still delicious. Nothing beats frying your own chicken cuz eat more cheaper lol
