Great recipe! I would jazz it up with jowl bacon and use thyme instead of basil.
When I was growing up my mom would make mashed potatoes on Friday night and then leftovers would be made into potato cakes. I don't remember cheese but she certainly added onion. Thanks AB for making this video.
