Authentic Trinidadian Coconut Sweet Bread

Today I am sharing my coconut sweet bread recipe. Sweet bread is enjoyed in the Caribbean around mainly around the Christmas Season. Its very sweet, tasty and delicious. It can be eaten in many different ways and any time of the day. Hope you enjoy this recipe

2 cups sugar
2 cups coconut
1 cup evaporated milk
4 tsps baking powder
1/2 cup raisins
1/2 cup mixed fruits
1/2 tsp nutmeg
1 tsp cinnamon
1 tablespoon vanilla extract
1 tablespoon mixed essence
