Double Chocolate & Matcha Swiss Roll Cake｜HidaMari Cooking

This is a recipe for chocolate-covered roll cake made with rice flour.
Because it is covered with savory chocolate with almonds, the white chocolate cream inside is not too sweet.
The crunchy texture of the chocolate and the moist roll cake are a perfect match.
▷Ingredients:
■Matcha green tea roll cake
4 egg yolks
25 g thick white sesame oil
35 g water
40 g rice flour or cake flour
8 g matcha green tea
4 egg whites
80 g sugar
Decoration
40 g white chocolate
200 ml heavy cream
100 g sweet chocolate
10 g thick sesame oil
40 g roasted almonds
▷How to make
1. Beat egg yolks with sesame oil and water in this order.
2. Sift the rice flour and matcha (powdered green tea) and add to the mixture.
3. Add sugar to the egg whites in 3 batches to make a meringue.
4. Add the meringue to ② and mix until uniform.
5. Pour the batter into the cake roll baking pan and bake in a preheated oven at 170℃ for 13 to 18 min.
6. Mix the melted white chocolate with 50 ml of heavy cream.
7. Beat 150 ml of heavy cream in iced water while chilling. Add (6) and beat until stiff peaks form.
8. Spread heavy cream on the matcha roll dough and roll it up. Refrigerate for 1 hour.
9. Add the melted sweet chocolate, sesame oil and roasted almonds in this order and mix.
10. Pour the chocolate mixture over the rolls.
