What’s saucier and cheesier than some enchiladas? The process of cooking them with your boo! We’ve split this mouthwatering Enchiladas recipe for you and your partner to dial down the effort and double up the romance, together. Remember, good food can be made by one, but great moments, those are made by two! Chop chop!*
Cooking time with better half: 20 minutes
Chef 1
Ingredients:
4 tomatoes (boiled)
3-4 dry red chillies (soaked in hot water)
½ cup hot water
1 tsp red chilli powder
1 cup boil and salted kidney beans / black beans
½ cup chopped onions
½ cup chopped spring onions
¼ cup chopped coriander
Salt to taste
¼ tsp black pepper powder
Procedure:
Add boiled and peeled tomatoes, dry red chillies, ½ cup hot water to a mixer jar and blend it into a smooth puree and pass it over along with good vibes to Chef 2.
For making the filling for the enchiladas, add boiled and salted kidney beans to a mixing bowl.
Add chopped onions, spring onions, coriander, ¼ cup of the enchilada sauce that Chef 2 has made to it, and mix well.
Now, add salt as per taste, black pepper powder, and mix well again. The stuffing is now ready. Hand it over to Chef 2 so that they can start assembling the enchiladas.
Chef 2
Ingredients:
3-4 tsp oil
3 tbsp All-purpose flour
2 tsp chopped garlic
½ cup water
Salt to taste
1 tsp red chilli powder
1 tsp cumin powder
1 tsp dry basil
¼ tsp chilli flakes
1 tsp dry oregano
2 tsp tomato ketchup
Procedure:
Heat up a pan and add oil to it. Now add all-purpose flour stir and cook for 1-2 minutes.
Now add chopped garlic to it and stir well.
Now add the tomato and chilli puree to it and stir well.
Ass ½ cup water, salt as per taste, red chilli powder, cumin powder, 1 tsp dry basil, chilli flakes, dry oregano and stir well.
Now add tomato ketchup to it and mix well again.
Add water if required, cover, and cook for 5-7 minutes. Voila, the sauce for the enchiladas is ready!
Time for you to assemble the enchiladas. Spread 2-3 tsp of the filling mixture on one side of a tortilla. Add shredded mozzarella and cheddar cheese on top, (Maybe a little more on Chef 1’s tortilla?) and roll it.
Now add the enchilada sauce to a baking tray and spread it well. Put the tortilla rolls on it and top them with the sauce. Spread some filling mixture and then some more sauce on it.
Sprinkle some spring onion greens and shredded mozzarella and cheddar cheese on it and bake the enchiladas at 180-degree celsius for 20 - 25 minutes.
There you go! Your saucy and cheesy enchiladas are ready to dive into.
