    I’m Vietnamese and I approve this recipe!! I made this and it turned out absolutely delicious!! I made a few adjustments - I sautéed the tomato paste with the lemongrass, cinnamon sticks, anise, and cloves. I also adapted from a different recipe by replacing the two out of four cups of beef broth with coconut water. The coconut water gave it a hint of sweetness.
    I enjoyed this recipe and your CZcams channel. First time making one of your recipes!

    Your tip about freezing tablespoons of tomato paste was the best cooking tip ever! I do this with any thick consistency ingredient that I use only a small portion of like chili garlic sauce, hot sauces, etc. It’s such a waste to find an expired bottle of “whatever” after only using one or two tablespoons. Thanks for this tip!

      I put leftover tomato paste in a plastic sandwich baggie and lay it flat, then u use anything like the back of a knife or a chopstick to “cut” indentations in the bag and when it freezes, the pieces break off easily. You can do lines or cubes, depending on the baggie size. Imagine a tik tac toe pattern.

    My husband loves ordering this from Vietnamese restaurants. Going to give this a try this week. Thanks for the recipe. You can regrow the ends of lemongrass by sticking them in water until roots grow. Then plant in your garden.

    1tbsp soy sauce
    1tbsp sugar
    1tsp five spice powder

    3 large shallots
    3 large cloves garlic
    1pcs cinnamon
    3 star anise
    3 cloves
    4 cups Beef broth
    1tbsp Ketjap manis
    2tbsp fish sauce
    3tbsp tomato paste

    I am glad you like this dish, and it’s also one of my favorites. My sister-in-law cooks this dish pretty well too, and she sometimes uses curry as the main spice. She also add a little bit of hoisin sauce when marinating the beef. You can also add dried tangerine peel to flavor it up more ;)

    My fiancé and I saw this video the day it was posted and knew we had to make it for dinner the same week. Couldn't find beef fingers but we did substitute stew beef as suggested. Followed the rest of the recipe and everything came out perfectly. We like a little oyster sauce and siracha with these kinds of noodle dishes and they paired very well! We'll definitely be making this again and next time will use some cheesecloth and a bit of twine to make a sachet for all the aromatics to make fishing them out a bit easier, but we'll keep the recipe the same.     my nephew is part Vietnamese and half white and his dad's have been amazing half white so that makes him a quarter Vietnamese but we love that Nummies food I just love this I'm going to try it alright take care

    I love your work. I spent time in Viet-Nam and other countries around there. While on a short week R&R in Korea I fell in love with kimchee. I have not found but one place that served and that was a Korean market in San Antonio. Can you do a segment on making it in an authentic way.

    Interesting you didn't peel the carrots. Just the other day I was taking with a friend about peeling carrots. We both were wonderful it is really necessary!

    I have never, ever seen or heard beef finger meat here in the US, in my 63 years. It does remind me of the vacuum packed beef cheeks I occasionally see. Are you familiar with beef cheeks, Flo? Fatty, but oh, so succulent.

    If you plant the base of the Union Judas cut off you have a leak light coming up next year and they're huge I cut him off at the base and chopped and used the white part and saute him sometimes it's great they're huge

    Flo, I suggest that you oil that wooden cutting board. Food grade mineral oil is best, but vegetable oil will work.

    I love you and Dude! Went through my account and got rid of a LOT of creators. Of course, I kept yours. Interestingly, I've never heard of garlic as being "juicy" (I love garlic) so next year guess who will attempt to home grow garlic? Great recipe. Take care.

    Hi Flo- that stew looks amazing. I’ve never heard/seen that type of beef. I wonder if we can find it here?
    You’re so resourceful in making the tomato paste into those little discs and freezing them. I always was bothered by the waste from only using a bit from the can. I started buying it in a tube. Lol.

      Maybe ask a butcher if not in a supermarket. I’ve been storing tomato paste like that for years. I only found tubes in recent years.

      Where we live (born and raised here) it is so hard to find a butcher that will do what you ask! I just heard of one though and so when I can FINALLY go out I will ask him about the finger cuts and some other things I’d like.

    This looks wonderful...I've never seen that cut of beef before and I seriously doubt I can get it at the supermarket so...I'm thinking beef flanken ribs might be a good substitute... Also, lemon grass and Thai basil might be tough as well but I'll check with our local Asian store a they carry a little variety of produce.

      THANKS to Dude's videography closeups on the steps & sound clarity in recording too. 👏 Just a query: it seems like this video doesn't have high definition sharpness recording nor deep colour saturation as all the usual videos have been in the past year.🤔 Any changes in equipment?

    Wow you grew that shallot??? Well done guys! I have some growing and wanted to know if you just let the top greens flop or if you cut them back? My shallots haven't come up to the surface yet. This recipe looks delish - I love lemongrass and tried to grow that too, but the plant didn't grow at all. It stayed alive for many months without change to size, then it just died.

      We let the green tops flop and turn brown. Also clipped the flowers as they may change the flavour. Some of our shallots did not grow at all but the ones that did are so good. Almost all gone. 🙁

    Q: Do you reserve/conserve the skimmed fat for use in other dishes? (i.e. to sauté other veg, meats, or even tofu like substances*) [* recognizing that use with meat replacement flies in the face of vegetarianism. However we carnivores like tofu now and again too.].. Also, the reserved fats have limited application in making winter feeds for birds and other creatures. Why waste?

      Hey James. Yes, low heat for 1.5 - 2 hours or until the meat is tender.

    No beef fingers? Use ,short rib, ox tails, or chuck roast really any kind of beef works , the fatty meats works best.

    Where is the best place to buy finger meat. I shop at Costco but haven’t seen it. But I wasn’t looking.
