Teesside Hot Shot Parmo Recipe | Middlesbrough’s Famous Chicken Parmo

  • In this video I show you how to make the famous hot shot parmo. This hot shot parmo recipe is famous to Middlesbrough and is widely served at the famous Manjaros restaurant franchise.
    Ingredients: (Serves 4)
    4 Chicken Breasts
    1 Tbsp Vinegar
    140g Plain Flour
    1 Tbsp Red Chilli Powder
    1 Tbsp Red Chilli Flakes
    1 Tsp Garam Masala
    1 Tsp Ginger Powder
    1 Tsp Garlic Granules
    1 Tsp Salt
    2 Large Eggs
    185g Golden Breadcrumbs
    3 Red Onions
    2 Bell Peppers
    Jalapenos (As Required)
    Coloured Mature Cheddar Cheese (As Required)
    Garlic sauce for serving
    Chips For Serving
    Oil For Frying
    (Optional to add extra salt, chilli powder and chilli flakes in to the eggs)
    For the Béchamel sauce:
    50g Salted Butter
    50g Flour
    ½ Tsp Chilli Flakes
    500ml Milk
    25g Coloured Mature Cheddar Cheese
    Method:
    1. Place each chicken breast between a sheet of cling film and flatten out until its half the original thickness.
    2. Cut off any extra fat on the chicken breast. Sprinkle with vinegar and rinse under cold water.
    3. In to the plain flour add, chilli powder, chilli flakes, garam masala, garlic & ginger powder, and salt. Mix well and transfer to a large flat plate.
    4. Beat the eggs and add in extra salt, chilli flakes and chilli powder if needed.
    5. Coat each breast into the flour mixture and then coat with egg.
    6. Finally, coat each breast with breadcrumbs and fry on a medium heat 6 mins each side.
    7. For the béchamel sauce, melt butter and in flour and cook for a few mins. Add in chilli flakes and half the milk and whisk any lumps away. Add in the rest of the milk and cook until the sauce thickens.
    8. When the sauce has thickened, turn off the heat and add in cheddar cheese.
    9. Place each chicken breast on a baking tray and layer with béchamel sauce.
    10. Add on onions, bell peppers and jalapenos. Then cover each breast with cheddar cheese and bake for 20 mins, gas mark 5.
    11. Serve with garlic sauce and chips.
