How to make Brown Stewfish

- Ingredients:
3 Slice of Red Snapper Fish
1 Scotch Bonnet Pepper (Finely Chopped excluding some of the seeds)
1 Onion (Chopped)
1 Tomato (Chopped)
5 Garlic Cloves (Finely Chopped)
3 Stalk of Scallion (Finely Chopped)
1/4 of Red Sweet Pepper (Sliced up)
1/4 of Yellow Sweet Pepper (Sliced up)
1/4 of Green Sweet Pepper (Sliced up)
1 Sprig of Fresh Thyme
2 Teaspoon of Blended Green Season(Consisting of Onion,Scallion,Thyme,Pimento Seeds,Scotch Bonnet Pepper,Ginger)
2 Teaspoon of Maggi Fish Seasoning
2 Teaspoon of Maggi All Purpose Seasoning
1.5 Teaspoon of Paprika Seasoning
2 Tablespoon of Grace Tomato Ketchup
1/2 Teaspoon of Brown Sugar
1 Teaspoon of Vinegar
1 Carrot
1 Small Irish Potato (I did not have any ) Include in yours
6 Okra (I did not have any) Include in yours
Recipe:
Step 1: Scale and Clean up fish and wash with Vinegar or lime juice. Dry Fish and place in a bowl
Step 2: Add a teaspoon of fish, all purpose and Paprika Seasoning in a bowl and mix together well and then apply to fish and ensure the fish is properly coated. Also add 2 teaspoon of blended Green Seasoning to fish.
Step 3: Place your frying pan on the stove and let it get hot then add a good amount of oil to the pan and allow it to get hot.
Step 4: Gently add your fish to the heated oil. Be careful not to drop the fish in the oil or else it will splash up and burn you.
Step 5: After adding your fish to the pot add a few garlic cloves, a scotch bonnet pepper and a sprig of fresh thyme. Ensure these are dried properly before adding to the pot to avoid the oil from splashing up.
Step 6: Do not move the fish around as soon as you place it in the pot. Let it just stay and fry on each side for 5-8 minutes, just bring the flame to medium to ensure that the fish do not burn. After the 5-8 minutes just gently turn the fish on the other side and let it stay for another 5-8 minutes.
Step 7: After the fish is finished frying remove from pot.
Step 8: Cut up your green seasons. Onion, scallion, scotch bonnet pepper, garlic, tomato, sweet pepper, carrot, Irish potato and okra.
Step 9: Add pot to the stove to make the sauce for the fish and pour 1 1/2 table spoon of oil to sauté the green seasons.
Step 9: Add the scallion, onion, scotch bonnet pepper and garlic to the pot and sauté for 1 minute and then add the carrot and Irish and sauté for another minute. Then add the sweet peppers and tomato to the pot and sauté for another 1-2 minutes. Then add a 1/2 of teaspoon of browning and then add okra and a half cup of water and cover the pot. Also add a teaspoon of Fish and all purpose season and 1/2 of teaspoon of paprika along with a teaspoon of the blended green seasoning.
Step 10: Let it stay cover for 5 minutes and then add a 1/2 of teaspoon of brown sugar and a teaspoon of vinegar and stir well and then add 2 table spoon of ketchup and stir well and cover for another 3-5 minutes.
Step 11: Add the fish to the sauce and try to use a spoon and add the sauce on top of the fish gently and try not to break the fish. Cover and let it simmer for another 8-12 mins and continuously check on it to ensure the sauce is not drying out.
Step 12: Plate it and 😊

Why sugar??
The sugar is optional.... you do not have to add any to yours. I like adding a small amount to mine just to add a little flavor when combine with the vinegar and the other ingredients.
