It’s closer to omelette than it is bread. Omelette can be made into “wraps” just more this. This is definitely NOT a flatbread even a better descriptor, omelette, exists.

No shade but I'm hesitant to even try because it feels like what you will get flavor wise will conceptually be much different than the transposed name on the concept.

Ok I followed your recipe to the T but the goddamn thing stuck to the parchment paper you might want to redo this and say to spray it with avocado oil or some other kind of spray oil. I am 100% Italian. I’m a fabulous cook and I own a cookie business for 30 years. I know what I’m doing so please incorporate the spray, thank you

I've made something similar with eggs cream cheese and parmesan baked the same way on parchment and used as lasagna noodles for a low carb lasagna.

Its crazy how bread-like it becomes, easily the best "bread" recipe that doesnt use actual flour

Personally I don’t think it tastes eggy and it doesn’t have the same texture as an omelette. Just make sure you don’t over blend it.

No, I just baked it and then peeled it off of the parchment paper when it was done. Both sides will brown

Why this have to be baked for so long?
So that it is fully cooked and the moisture bakes out. Otherwise it wouldn’t hold together well
