The eggshell colour depends on the breed of the hen. Generally speaking, white shell eggs come from hens with white feathers, while brown shell eggs are produced by hens with brown feathers. Nutritionally, both brown and white eggs are identical unless the feed has been enhanced for speciality eggs such as Omega-3.

Umm, not necessarily the feather colour - it's the colour of the EARS. Some are browny-pink and lay eggs with brown shells, others are bluey-purple and lay eggs with white shells. Then you get hens that lay eggs with shells in shades of blue and green. The content is the same. The taste varies due to diet.

If you think the brown ones look different you should see the brown spotted ones and even blue-green ones too. different breeds of chickens give different colored eggs. depending on the nutrients given to the chicken can either deepen the eggs color or if they don't get enough nutrients the color can be less saturated. will look for a link to add to comments explaining this

@Marita the nutrition intake of the chicken can often times be reflected in the egg color. if a breed normally produces brown eggs, sometimes there will be slight variations in the pigment in the shells color. depending on the chickens diet. free range/farm raised eggs tend to have harder shells, fuller more vibrant colors(if the breed gives colored eggs) because chickens are omnivores. insects being a major part of their free-range diet, along with some plants. their yolks also tend to be a darker orange-ish color too. their flavor, another thing that can be affected by a healthy, well-rounded diet.

Easiest way to explain is... Different coloured hens, can lay different coloured eggs.. Usually if they have white feathers, and are light coloured around their ears, they have white eggs, and darker feathers and ears, mean darker eggs etc
Genetics usually decideds the egg colour. But they can all be used basically the same way 🤷

Both brown eggs and white eggs are the same in structure, different hens produce different colored eggs. A hen with brown feathers and red earlobes will likely lay brown eggs, whereas a white feathered hen with white earlobes will produce white eggs. Some eggs even come out blue/grey or speckled depending on the hen that laid them. I've seen a kitchen that had a variety of eggs in their fridge. So inside the egg, nothing is different, however, the difference is in the diet and environment of the chicken. The food eaten by the hen who laid the egg can directly affect how an egg tastes. Hens that are allowed to roam in the sunshine also lay eggs that can contain up to 3-4 times the amount of vitamin D found in eggs laid by hens that raised conventionally. Also, you'll notice that the brown eggs and white eggs have a different texture. White are more rough while the brown eggs are smooth. Fresh laid eggs, all fresh laid eggs are smooth. The white eggs have a rough shell due to the bleaching process for packaging. ((I got this information from a Taste Of Home article online.))
