Dragonfly larvae (although creepy to some) are actually really fun to keep as pets, especially the species known as Darner dragonflies. They eat things like Bloodworms, Mosquito larvae and small fish, and all you need is a small tank with some rocks and stuff and a stick that reaches above the tank so the dragonfly has something to crawl onto when it goes through metamorphosis
(I find Darner larvae to be easier and more fun to keep because they are active predators that chase their prey, the species you found seem to be Clubtail/Skimmer larvae which are ambush predators with a smaller appetite )

The proper souther term for Crayfish is Crawdads. They are delicious when steamed with garlic butter, lemon pepper, garlic pepper, old bay and cajun seasoning.
This exact fight happened in my stepdad's canoe when I forgot to put the baby turtle back in it's bucket. The crawdad (crawfish) was what my stepdad was using for bait, and he let them run around in the middle of the canoe. This particular crawdad was five times the size of the first one in this video and the turtle was slightly smaller than the one in the video... the crawdad tried to claw the turtles face and before I could scoot over to grab them the turtle reached out and bit the crawdad's head off.
