Stocking our HEALING PANTRY | Fermented Honey Garlic, Elderberry Syrup, & Fire Cider!

    Well it's that time of year again on the homestead when viruses start circulating and cold and flu season begins! So we refocus our energy for a day to concentrate on stocking up our home herbal medicine cabinet rather than our regular food pantry. Join me in the kitchen today as I make fire cider, elderberry syrup, and fermented honey garlic, which all have their own special medicinal qualities that we enjoy making part of our everyday life during this time of the year.
    Elderberry Syrup Recipe
    100 grams (about 3/4 cup, heaping!) dried black elderberries
    25 grams (1/4 cup) dried ginger
    10 grams (1/8 cup) whole cloves
    1 cinnamon stick (I use Ceylon or true cinnamon!)
    25 grams (1/4 cup) dried astragalus root (optional)
    1 liter (1 quart) of filtered water
    Raw honey to taste, about ¾ cup (about 6 fluid ounces)
    Simmer all ingredients except the honey for about 20-25 minutes until the water is reduced by about half. Strain through cheesecloth. As your syrup is cooling, add your honey to taste.
    Fire Cider for 2 Quart Jar
    1/2-1 cup horseradish
    1/4 cup turmeric
    2 onions
    10 garlic cloves
    1/2 cup ginger
    3 jalapenos, less if you prefer less spicy
    1 large lemon
    1 large orange
    2 limes
    2 cinnamon sticks
    rosemary
    thyme
    sage
    few peppercorns
    Chop or thinly slice and layer in your jar. Top with raw apple cider vinegar. Cover with parchment paper and lid, shake and burp daily. In one month, strain through cheesecloth and sweeten with honey to your preference. Use at you would like!

    I am growing ginger in my garden here on PEI but I haven't looked at the root yet. That'll be just before Halloween I expect. Next year I will experiment with turmeric in the garden. I have grown both plants in pots throughout the winter here on PEI.

      That's awesome...I grew them both with minimal success a few years ago in pots...and I keep saying Im going to try it again...next year will be my year to try again lol🤣

    Have you ever fermented fire cider ingredients to eat like a relish or pickle? I dehydrate the scraps, grind them and use them as a seasoning.

      I haven't tried that! I've heard of people using it as a seasoning like that...I'll definitely try it next time! Thanks for the suggestion! My husband wants me to try pickled eggs using the fire cider liquid, so that's what I'm doing this evening lol

      I have not! But that's a great idea!! Might have to gather some and throw in one of my fire cider jars!

      We get the honey from Dutchman's Gold in Ontario. You can order from their website or they also have it listed on Amazon.ca if you're in Canada. It's fabulous tasting honey and I love that I can order a large size!
