You actually dull your knife more when you sharpen it with imprecise technique, so of course it will be less sharp than factory edge. Also some of these knives might need a little edge reprofiling, they may come with a different edge, and need a bit more work, maybe even with a file, and then a stone, to get them super slicey. So a simple test can't settle whether stainless of carbon is more slicey. The real difference should be quite small, with modern steels

I bought the carbon an used it one weekend and a few weeks later opened it up and had rust on the blade. Lol
On Alone that was the issue the guy and gals had with their carbon steel knives they rusted over time.
