The dish of chicken rice, is really just that - chicken that’s cooked in a certain way, served with rice that’s often cooked in chicken broth and some light seasoning, paired together, and served with both a sauce and soup on the side. It’s not typically an overly flavorful dish, but it’s one of the ultimate comfort food combinations.
In this video I met up with Daniel who is a Singaporean who loves chicken rice. We started off at Yuhua Village Market & Food Centre to go to a place called Hup Hong to specifically eat their version of roasted chicken rice. The roasted chicken, I’m not sure if it was deep fried? was sliced up on top of a plate of rice and served with a red chili garlic sauce. Overall, it was quite a tasty plate, the chicken was smooth but not mushy, and it was salted perfectly. I also liked the sauce at Hup Hong, which was heavy on the chilies and garlic, with a faint taste of ginger, and nicely salted.
After Hup Hong we took a drive across Singapore to a legendary boiled chicken rice restaurant, and a place that serves an original pretty old fashioned Hainanese boiled chicken style. The restaurant itself was pretty cool, very authentic and looked like it had remained pretty much the same since it was open the last 60 years. We had a plate of boiled chicken and each had our own bowl of rice. What I really liked about Yet Con was that the chicken really tasted like chicken, it was a natural tasting boiled chicken with a very firm texture. I also enjoyed how they had two different sauces, one just pureed ginger, and the other a chili vinegar sauce.
I thought the roasted chicken was really going to win for me, but after testing both, I was pretty pleased and impressed how good the boiled chicken also was. Overall, I think I’d prefer roasted chicken on a whole, as I’m not a big fan of boiled chicken skin. But that being said, I highly enjoyed the Yet Con atmosphere and shop. Both were good. My personal rule of thumb: when eating at a fancy or famous chicken rice place, go for the boiled chicken. When eating at an ordinary one, go for the roast. The quality of roast chicken doesn't vary a lot between different outlets, but good boiled chicken and ordinary boiled chicken are worlds apart in terms of flavour, aroma and texture.
You are so polite even when your not into the food. Unless mark is eating at a 90* angle you know he's not into it. Also the fact he loved that ginger so much tells me that chicken needed reviving. Love your videos mark!
I agree with you, I'm also not a big fan of chicken skin when it's boiled but fried or roasted is absolutely delicious. They sell a similar chicken in Colombia but you always get salted boiled potatoes and our famous arepa as side dishes.

Here's a challenge to all Chicken Rice lovers - try one where the chef expertly de-bone the chicken parts before chopping it into bite sizes. Its not commonly done nowadays either due to time constraints or simply lack of skill, but chicken thigh bones are notoriously brittle and tend to shatter causing little shards of bone in the meat. The de-boned version, in my humble opinion is an experience in itself.

Had chicken rice at this stall once after you guys recommended it. It is so far one of the best chicken rice I agreed.
Roasted and Hainanese Chicken are different but both equally delicious. The chicken meat doesn't even need any chili or dip at all. Just pair with a bowl of steaming white rice and that's already a winner.

Great video. I enjoy watching your expeditions to find great restaurants around the world. I have a suggestion. Maybe you could develop an app where you track and log all the restaurants you have been so that travellers can find the pinpointed spot via gps and. This would be specially great if you want to see how nearby you are. Especially now that we live in a day and age of portability and adaptability. Just a suggestion but I would definitely download it if you did do one!
