    Thank you Melissa. I studied the chemistry behind the conversion years ago. You explained it very well from a practical perspective. Think I'll try it with my grapes first this year.

    This was a really great video! Most vids about making vinegar skip the first fermentation step.
    I wanted to add that the alcohol content preferred by acetobacter is 5 to 6%. So if you wanted to make wine vinegars, you can dilute the wine by half. Most wine is 10 to 12% maybe 15%. Add some raw vinegar with some mother and let it ferment. Ive made lots of red wine vinegar and it gets better with age. Im currently using some pinot noir vinegar that finished in 2017. Its slightly thickened, smell is amazing, deep winey vinegar smell 💖

    Interesting. Being a Homebrewer I can dothis is large batches. For my gas test/end stage I can use one of my water locks to let it degass and finish. Not sure if it was use but I recently learned of a drink for hot weather [[I'm in the nice hot and humid South working outside-it calls for Apple cider vinegar, honey or molasses and ginger. Trying to grow ginger, bee hives in the future if things do not come apart and now-fruit vinegar!

    If you leave your fruit in for a month, you will get vinegar. And it will be strong, especially if you put in a quarter cup of sugar.

    With Apples, when we desire apple sauce/cider, we first core all apples with an apple-corer/slicer, we keep the cores and freeze them until we want to make Apple cider vinegar, but make apple cider in a crock pot, then apple sauce/butter from the solid leftovers. I’m curious how many others use this same technique so that nothing goes to waste from an Apple. Great video Melissa! 😊

    I never thought of making apple cider vinegar before. I have a crab apple tree that now smothers itself with tiny scarlet apples - and yet I do nothing with them. They have a somewhat 'perfumed' taste if I eat them raw, so didn't know what best to do.
    We do use a fair bit of apple cider vinegar since we like making our own soda bread, so I'm going to give this a go in the Autumn.

    I have literally had a jug of juice swell just a bit in the fridge and tasted alcohol like when I tasted it. It was left in our church's fridge. I did not know you could make fridge wine. smh Thanks for sharing; great video.

    I've been trying to make vinegar in different ways and this is the simplest. I had one other person show me this style. My question to you Melissa is about acid percentage. I read that if it's under 4 or 5% aceitic acid it's not permanently shelf stable and another source saying you need to have a sugar content that would make about an 10 to 14% ABV alcohol if you were just making wine. In other words a 10 to 14% abv wine would turn into a 4 to 7% acetic acid vinegar. Do you have any advice about that topic? I plan on having a lot of fruit in the future and I'd like to make a lot of fruit orchard wines and vinegars but I really love using wild yeast over packet cultures you buy. If you have any incite into this nuance it would be greatly appreciated Melissa. Thanks

    Can you Watering Bath Can on a glass top stove? My Aunt said no, but I want to learn to Can in order to make the food I grow last longer. Right now, What I can not freeze, I give away.

      Yes. You absolutely can! I have been doing water bath canning on my glass top stove for 8 years, and one year pressure canning in my All American #21 pressure canner with no problems at all.

    Hi Mellisa! Thank you for the wonderful video on fruit vinegar. I made two jars of apples scrap several weeks ago and one made a clear-jelly like substance (not floating)while the other has a more white opaque jelly like substance (floating on top) in it. Are they both mothers? And what do you do with the mothers? Just leave it when bottling up the vinegar? Thank you!

    Melissa, can I do this with green grapes? I would poke holes in them and toss them in a 1/2 gal mason jar, cover with a breathable cloth and let set?? I am a bit confused as some info that I have seen on CZcams has you add a little bit of sugar... like 1/4 cup. I have these grapes that are going to go bad. I tried an experiment of taking the grapes and storing them in a mason jar, vacuum sealing the jar and putting them in the refrigerator. Surprisingly, this has worked well. Now, I need to do something with them. I could freeze them, however, I also thought I could maybe do wine or vinegar. I have never made wine and would like some for cooking but I haven't read or researched it and have a little more knowledge on the vinegar.. even though I am a beginner at this too.. I just started my first batches of apple scrap vinegar a couple days ago. Then, I found your information. I am also confused about apple vinegar and apple cider vinegar as I saw on CZcams someone say they are NOT the same thing. So, I am trying to figure out how to make apple cider vinegar. Can you please help me? I've been so sick and have been told I will be losing what is left of my stomach as soon as I am healthy enough to have the surgery ... I'd like to be healthy enough that I don't have to have the surgery at all. It's a long story that I would love to share with you because what has happened to me is supposedly really rare. It took forever for the Dr.'s to discover what was wrong but, in short, I had a large hole (35 mm) that was caused by an ulcer which created a gastrocolic fistula that communicated with my colon. I've been dealing with this for over 2 years now... picc line, 5 stents placed in my stomach, a huge surgery at the Mayo Clinic in Rochester last October, a G-tube for feeding afterwards...So much pain and sickness... My feeding tube fell out for the 2nd time at the end of May and I chose not to have it replaced because it was causing me so many problems (I could barely take in any nutrition from it anyways and it caused me a lot of pain too) and I had discovered "food as medicine"..started doing some juicing and making my own bone broth. I went from having to have my husband push me around in a wheelchair just to shop for groceries to being able to walk the entire grocery store after just 2 weeks of changing my diet. Then, I got sick, lost 10 pounds quickly and haven't quite bounced back all the way ....anyways, I'd love to explain what all has happened to me.. too much to do that here but there is more... and not sure how to share it with you. But I am desperately reaching out for info/help. Thank you so much for everything you have provided.

    Also, we have a variety of fruits and grapes. Not only do I dehydrate and jam, we also throw them whole in a juicer, and fill water bottles and freeze, for concentrate juice. We always have a ton of Thompson seedless. Would I be able to skip the first 2 steps, and thaw and place in jar to continue to make vinegar, or do you need the whole fruits to ferment? Thank you.

      White vinegar is made by fermenting alcohol into acetic acid. I don’t know if there’s a best way to do that at home. Plus most are also distilled.

    I made grape juice using grapes from my vine, but now that juice is in the freezer. Could I thaw it and use that for making vinegar or does the juice need to be fresh?

      From my experience, no. The freezing process seems to kill some of the bacteria and yeast needed for the fermentation process.

    Thank you Melissa for posting this video. I have followed your recipe for the fermented juice. I noticed today that it’s all going mouldy. I have used plums in one jar and damsons in another and the Same is happening to both. Any ideas as to why this may be happening 😊

      Most fermenting processes recommend using weights usually available in the canning supplies aisle. I have seen some people using large marbles as weights in smaller jars.

      Yeast is naturally occurring in the air and will find its way in. However, not washing will increase the yeast content from the start.

    Nice high-level overview but Mrs. on a lot of marks. If you’re going to show people how to make vinegar or talk them through it, you need to include all key steps in it, including stirring of it every day during the alcohol process. If you don’t, you’re gonna get mold, especially when you’re using fruit based vinegar. To enhance your videos I would go into a little more detail so people know exactly what they need to do.
