We're only seeing the sampling itself (and it wasn't even done properly in this video, there's more to it than this) but there's a whole world of production and mixing Daft Punk did on top of the samples. It's deceptive, One More Time sounds super simple but its production and mixing are surprisingly complex

The I wonder sample is just vocals and a piano tho, Kanye had to add a lot of things like drums, a lot of different synths and leads, bass, strings and brass and other stuff. He also has to write some verses on top I for one think it’s genius
Daft don't simply copy paste samples like others do, they are still very creative while sampling and make it something completely unique and of its own.

Idk but I’m guessing the 1 dot is supposed to be the kick drum and the 2 dots are a snare, the 2 dots hit right when the snare hits in the sample
