  • Today I'm showing you how to make this classic French Apple Tarte also know as tarte aux pommes a la normande.

    Recipe:
    Sweet Shortcrust Pastry: (Recipe from- baking made easy, Lorraine Pascale)
    250g Plain Flour
    125g Cold, Cubed unsalted butter
    2 Egg Yolks
    2 Tbsp Caster Sugar
    Large Pinch Of Salt
    1-2 Tbsp Milk/single cream
    Frangipane filling:
    150g Caster Sugar
    130g Unsalted butter, Softened
    Zest of 1 Orange
    Zest of 1 Lemon
    1 tsp Vanilla Extract
    200g Ground Almonds
    30ml Cognac
    25g Plain Flour
    2 Eggs
    For the top:
    4-6 Large Dessert Apples (I used Golden Delicious)
    60ml Apricot Jam
    Boiling water (amount depends on the consistency you want)

    Looks absolutly delicious Kate! Didnt realise you have to put the tart back in the oven after you take out the rice! Thats why I get a soggy bottom!!! Thanks for the tip xxxx

    Another brilliant recipe here Kate! I always find with sweet shortcrust it's easier to use a food processor because it's quite temperamental but you seem to have got it down to a tee. I've found that frangipane doesn't need a blind baked pastry case as it's quite a dry filling so the pastry doesn't absorb much moisture. It's packed full of flavour however and your arrangement of apples looks great as well.

      food processors are good and quicker but if a person prefers to rub between there fingers then so be it, as a chef I blind bake most pastries just to be on the safe side of them not being undercooked

      Thank you! I agree, definitely a time saver but I like to do it by hand to show the viewers who don't have a food processor how to do it. I tend to blind bake mine just to be safe rather then sorry. Thank you glad you liked it :)

    This looks delicious Kate! You're very skilled with the pastry ^_^ I have a question, do I need to use the brandy? Or could I use something else like orange juice? I try to avoid alcohol.

    3 things.
    1 Any reason why you put apple pieces on the side, or was it to just use up the apples.
    2. After the blind bake just before putting in the frangipane mixture, could you even then remove the excess parts of the pastry from the sides, btw im not checking to see what you know, im just asking for your opinion.
    3. Speechless, you have a wonderful way with pastry, being in a warmer climate here we tend to have to refrigerate the pastry before rolling it out.

      1. One for decoration and yes two to use up the apples!
      2. Yes definitely I just leave mine on till the end because the total time the pastry is in the oven for is about 1 hour and 45 mins so I let the excess go brown and then when I shave the edges off at the end they aren't too brown.
