    Spinach just goes so well with cheese! And this beautiful combination of salty feta, gooey and melty mozzarella, creamy ricotta, mixed up all together with spices and dill, wrapped up in crispy, flaky puff pastry... takes the prize!
    This is recipe is inspired by one of my favorite Greek dishes called Spanakopita. Although this is not spanakopita, but the taste and texture will remind you of it! Try out this delicious and easy recipe, it takes only minutes to prepare. These are freezer friendly too, and can be frozen raw, and baked directly from the freezer. The only difference is that the baking time would be 40-45 minutes if baked frozen.

    Spinach & Cheese Pies - Ingredients:
    10 oz frozen chopped spinach.
    1 small onion, finely chopped
    3/4 cup feta cheese crumbles
    1/4 cup mozarella cheese
    1/2 cup ricotta cheese
    1 egg for filling 1 egg for brushing on top
    1 tsp black pepper
    2 tsp red chili flakes
    1 tsp garlic powder
    1 tbsp dried dill (or 1/4 cup of fresh dill, chopped)
    Salt to taste (optional - keep in mind feta cheese is already quite salty)
    1 puff pastry sheet (I used ‪@pepperidgefarm1003‬ frozen puff pastry sheet, and its approximately 9.75” X 10.5” X 3/16” in dimension)
    Whisked egg for egg wash (brushing on top of each pie)
    Everything bagel seasoning, or sesame seeds/poppy seeds (optional)
    Preheat oven to 400 degree.
    Thaw spinach and squeeze excess water out. Add onion and the 3 cheeses, 1 egg, spices and dill. Now mix all of this really well and set aside. Roll out puff pastry sheet a little, don't flatten it out too much. Now cut into 9 squares, and don't worry if they are perfectly even.
    Add a very generously heaped tablespoon of filling into each square. Gently roll them up to seal ends. Place these on a parchment lined baking sheet. Brush each one with some egg wash. Sprinkle some everything bagel seasoning on top or you can use sesame seeds, or poppy seeds, or just completely leave these out. Just the egg wash alone is fine too.
    Bake for 20 minutes at 400, or until golden brown and cooked through! Serve hot or warm for best taste, but they are good even at room temperature.
    Tip: if you have any leftover filling, you can use it in your omelette, or make quiche, or even add some shredded chicken to it and make samosas/empanadas.

    I love how easy all your recipes are. And this one is super easy but they look bakery level professional. Do you think these would be good if frozen after wrapping them?

      Yes they definitely tasted as if they were from a rustic bakery! The dill and spinach go so well together with the cheeses. You can definitely freeze them and bake direct from frozen too, but baking time will increase to 40 minutes or so.
