    This looks amazing. First time seeing this particular dish. That corn beef can most definitely be salty if your not careful with it.

      Yes sir. That's right. I usually boil it first and discard the water so it's not too salty.

    This is amazing!! 😻😻 Can’t wait to try it. I’ve never thought about putting ochro in split peas cookup. I need to try it next time!! I’m from Guyana too and we always just cook ochro cookup lol…
    Can you try making oxtail stew!! I’d love to see that recipe if you haven’t done it yet 💕

      Hi dear you have to try adding okra to your cookup I always add it to any cookup I'm making also to curry fish and soups its delicious. I already have a few recipes of oxtail I'll attach them here.

    Your cook up looks good, but where I lived in Canada the peas they sells you don’t have to soaked it over night if you are making Dahl, pholourie or anything that requires split peas. The split peas that are selling is very soft in the Indian supermarkets or any supermarket and you never throw away the water.

    Candy why do you put sugar in all your dishes? I tried your roti yesterday with Bagan choka and I spoiled the roti by putting the sugar in it. My husband and I was practically fighting about the sugar. He is of Indian decent and he told me in all his life he has never heard of anyone putting sugar in the roti mixture. I should of taken his advice. I tasted the sugar in the roti and it sure did spoiled the roti. I am sorry I didn’t listen to him.

      I have been in the culinary business for over 30 years, sugar is added to many dishes to balance the flavored. it is also added to peas or some foods to help in digestion for persons who suffer from gas when they eat certain foods to prevent burn stomach or gas. You don’t put sugar to make it taste like syrup, for example split dishes such as soup, dhal, or cook up rice depending on the amount you add just a Dash of sugar. I have managed chefs and cooks in many food service establishments and these guys never one day add sugar to the dish that it couldn’t be served. Dishes such as spaghetti sauces which has acid, sugar has to be added. One has to know what they are about when using sugar in their dishes. Fried rice also, a pinch of sugar is added and the same for cabbage because some persons may suffer from gas if they eat cabbage. You probably added too much sugar to your dishes and it may taste funny to you and your family. When I am managing and supervising my staff in the kitchen, I make sure I instruct them on how to use certain ingredients in their dishes, sugar is one of those ingredients because sometimes we may be doing a catering which requires cooking in bulk or large quantities and that’s where the problem may come in because many persons can cook small quantities for five or ten persons but to cook up a pot for a hundred or two hundred persons they may ruin the dish with certain ingredients like sugar or ginger. I was once a food and beverage manager at a hotel, and one of my chefs almost ruined a meat dish with excessive ginger and I had to go in the kitchen and redo the sauce over, it was for a catered event which could have encountered severe problems, I had to rescue the dish.😀

      Need to do your own research Oma on the the use of sugar in many recipes especially in the Fast Food industry. I am not bashing fast food but after cooking for many years it is necessary to understand the balance that sugar adds to some dish. The first time I used a different coconut milk in making my metem(dry food) I was amazed by the flavor. Then I realized that the milk contain a percentage of sugar which made a distinct difference in flavor. Saying all of this to say there something else to learn only if you have an open mind.

      @@haroldsears9102 that's absolutely right. Sometimes if I'm using coconut milk that's very sweet I do not add sugar because the sweetness from the coconut is enough but if the coconut isn't sweet I always add a pinch of sugar.

      Oma. Your measurements must have been off because there's no way you can taste 1tsp of sugar in 4 cups of flour. It's highly unlikely but I also have a recent recipe without sugar just salt if you want to try that one you can.
