Goes to show how healthy a proper Italian diet is - our chef here is hail and hearty, active and has all his wits about him, yet he's clearly of a venerable age. Let's hope he's here to demonstrate his delicious and healthy recipes to us for many decades to come! Dancing around his kitchen with his favourite glass of red wine! xXx Edit to add: I wondered if cacciatore was similar to chausseur meaning "in a hunter's style" and it is! Yum yum yummmy!
I can't speak for other people; however, the Mediterranean diet is the one that works for me. Moderate amounts of red wine, and lots of olive oil which does not clog your arteries. Any kind of fat that is liquid at room temperature is relatively safe. You start needing to be careful when you eat butter. And as for margarine and shortening: forget them. You might as well put melted-down Tupperware in your food. Keep it natural. If you notice in this recipe, there are lots of vegetables. Cooked tomatoes are good at fighting cancer. I don't know what's in the peppers; however I do know what's not in them - a lot of calories. So really, the only questionable fat in this is the skin on the chicken. Having said that, I got it straight from my nutritionist that the low-fat diet that was so popular in the 90s is not necessarily good for you. Eating too little fat will cause constipation. That's my rationale for leaving the chicken skin on.
I recently discovered this guy and I can't get enough! He reminds me of my father in law, so cute! He is so fun to watch! Just so joy filled! Watching his videos just make me happy.
Hi Meg, I recently discovered him as well and he reminds me of my dear friend Nino who just recently passed in January. He had pizza shops and I worked for him, he would teach me how to cook just like Pasquale, really makes me feel good, fond memories. Take care
I'm constantly amazed by all of the great recipes I learn from watching Pasquale cook. We've learned how to make olive bread, steamed mussels, chicken marsala, chicken vesuvio, ... and all of them have blown away our dinner guests. I'm a huge fan! Thankyou! Tonight we're trying this recipe!
Many years ago I lived in Southern Italy for two years. One of the best times of my life.Thank you Pasquale for sharing. I love your passion for the food!
You make me miss my dad who had a heavy Italian accent and cooked great meals for his whole family when he retired from Contruction. I enjoyed making Italian meals with him.
I LOVE his accent!!!!! He is so about his cooking. Nothing better than doing it the old Italian way. Anytime I need a good ole Italian recipe , this is my go to for sure. Great video Pasquale!!!! Cin Cin!!!
Hola mi querido chef ,e aprendido mucho con usted difruto de sus recetas ,y me hace reír mucho a la vez gran sentido del humor Muchas gracias y Bendiciones .
My mother from Naples, Italy used to make this with red wine vinegar and not wine. She also used the same veggies and tomatoes, and also used a jar or Giardinare, which are Italian pickled veggies. I have to give it a try with the red wine.
Thank you for the recipe. This is the 4th of your meals that I have made with my 13 and 11 year old daughters. We are all learning together right here in NJ.
Thank you, Pasquale! It's been years since I've had this dish. My Grandma made it often. It was one of my favorites when I was a kid. I need to try this soon. Salute and Cin cin!!! 🍷👨🍳🍽
I have this in oven as we speak.I didnt use green pepper,yellow-orange-red.Used Merlot wine, dont know if it makes a difference? Forgot fresh basil, used dried. But looked just like this....Been decades since I had this.Smells terrific. Salute Cin Cin ~!!!!!!!! Just found your videos.Enjoy watching people who REALLY LIKE TO COOK videos.
Chicken cacciatore is in the oven!! A dish I’d have never dared to attempt just looking at a recipe, you made it so easy with your video. You’re the best chef teacher in the world. I feel like I’m your daughter in your kitchen. You explain everything clearly. You show us step by step. You speak not to fast, not too slow. Perfect pace. I turn on your video and I follow you. You made me a mama with a living kitchen for my family. Thank you. Thank you!!
I haven’t had this dish since it was popular in the late 70s. I thought I’ll have some again. My partner made and canned some cacciatore sauce. I made it. It was so darn delicious. Looking at this chef’s version, with wine and olives, yum!! I’m going to make some again. PS: I noticed the pan he used to put in the oven wasn’t the same baking pan when it came out. That’s TV for you. Nonetheless I’m impressed with his version of chicken cacciatore.
Just found this chap, it’s August, high summer here in Portsmouth, England. It’s 15.5 decrees C & tipping with rain & the wind is wrecking umbrellas but at least I know what I’m doing with my chicken thighs for tea tonight. I love the way this gent cooks.
Yummy! Thanks for this video...found you because I was craving for my favorite chicken cacciatorre and can't find a good one out in the restaurants and I decided to try CZcams...now I can make my own and share it with my kids and brag about the food I tasted in Italy back in the days when I was young and gypsying the world....
Thank you. Made it tonight...eating it now while typing this. Turned out great. Wife and kids seem to like it. I Will def make this again. For the sauce, I used two pounds (about 8) Roma tomatoes (peeled), one 28 ounce can of tomato sauce (great value Walmart), crushed the tomatoes by hand as seen in the video, and then added about 3/4-1 cup of water (it was too thick) and stirred. Followed the rest of the directions. I had to cook the sauce and the chicken a little longer than instructed. Cook time in the oven only took 45 minutes.
2:54 👌🏼🥰 atsa way you do if you taliano ! 😊. god bless this man. reminds me so much of my father ❤️ Enjoy his wonderful spirit while you can. They leave us at some point. But they leave us with all this good stuff. And they never leave our hearts 💕. Cin cin amici! 🍷
I know its been a year since this clip was made, but once again I made this recipe tonight. I added mushrooms and substituted with crushed red pepper, left out salt, you talk about good. This was very delicious. Thanks again Pasquale!! Salute and cin cin!
Reminds me of my grandfather Sonny Italian police officer who could cook anything and I use to watch everything he made and now I'm the best cook in the family 🥰🥰🥰🥰
Making this for my wife and kids tonight thank you soo much, love your recipes and love your culture senoire!!! Much love from the Mexican in Los Angeles lol
As I type, I am in the process of making this. My chicken browned so nicely, and the sauce smelled wonderful! It's all in the oven now. I plan to serve this over pasta. I am so looking forward to it! Unfortunately, the baking dish that I started making this in was too small, so I had to change part way through. I'm sure it will still be good, though.🍝🍷
Thank you dear man for sharing your talents with us! How i wish i could be sitting there with you eating your delicious dishes! Thank you! I will definitely make this dish!😊 God bless you!
I don’t make cacciatore but I make something very similar. I cook the chicken but I don’t flour it, and then I deglaze the pan with the chicken out and put the onions in and garlic and all the other ingredients. And then I put the chicken in the pot and add the tomato sauce(crushed tomatoes) and add my herbs and spices. And let that simmer for like 2-3 hours and then I fish the chicken and shred the chicken and put it back into the sauce and it becomes like pulled chicken and it goes good in sandwiches and pizza
I made this and it is delicious! The cookbook recipe I have was no where near as good so I haven't made cacciatore in a long time until now. Thank you for posting!
@@CowboyPhil73 No I didn't watch the whole video because I was skipping around to get all of the tips and instructions on preparing thew dish that evening for supper for my family. I once made a fried chicken cacciatore. Yes, you read that right, with corn and semolina breading. Wasn't able to use olive oil for the deep fry itself and settled for safflower but it tastes pretty great.
I love this guy! By coincidence the recipe is very close to what i grew up with. His personality his accent everything about him is fabulous. I also love the kitchen. He should make more videos. He's fun and charming and knows how to cook!

I follow your recipe and it was delicious, I just added a Haitian taste with natural cashews from Cap-Haitien on it. I truly enjoy the food with family and friends. Thanks a lot for your recipes.
Dear Chef - I made your chicken cacciatore recipe for Thanksgiving yesterday. It was delicious! Thanks, again, for sharing your culinary skills with the rest of us. Salute e cin cin. - Jim (Seattle)

I love all of your recipes. My grandfather was full-blooded Italian and I really appreciate all of your efforts to post your recipes. Would you by chance have a recipe for tempura batter?
Thank you so much for your yummy recipes! I have made quite many last year and this year!!! Especially your Cacciatore and Piccata Recipe! Our family loves it! We love your energy for good food and you put so much thought into each recipe. Thank you so much. Cin Cin!
I made this with boneless chicken breast. (minus the olives. I didn’t have any.) It was phenomenal! As a matter of fact, I’m going to be making it again tonight.
Grazie signore! 🙂 I've always thought that making this dish was much harder. Now that I've seen you do it, I will definitely give it a try. I think my boys would love it. Tutia tavola a mangiare! ❤️

Consider myself lucky! To have the opportunity right here to learn to cook and be reminded that life is beautiful! Thanks Pasquale!
Once I saw the sip of wine from the measuring up cup, subbed.
He is clearly the best Italian chef out there. If you watch him cook. There is no excuse for making a bad Italian dinner. 🍷🍷

It is indeed chicken, hunters' style
Its the wine and peppercino that keeps him young and healthy!

Are the black olives out of a can or the seasoned ones that are oily/spicy in a glass jar...???? Looks so TASTY
knight flyer hey:).... so the spicy 🌶 oily in the jar black olives... what are they called.. I can’t think off hand
knight flyer ha ha I know I know!! Lol 😂

Making this for my folks as a birthday / Christmas present at the end of this week. This looks absolutely divine!
My mother from Naples, Italy used to make this with red wine vinegar and not wine. She also used the same veggies and tomatoes, and also used a jar or Giardinare, which are Italian pickled veggies. I have to give it a try with the red wine.
Just seen chef Jean Paul make it with red wine and red wine vinegar.
I would love to smell his kitchen! Im gonna make this dish for my man, thank you chef!
Made his version so many times. Always delicious due to fresh ingredients. Just saute mushrooms with onions because I love mushrooms.
Same here. Not a big fan of olives, so mushrooms it is!

Probably one of the few decent true home cooked Chicken Cacciatore recipes here. Truely authentic.

I made with a rabbit and once with a pheasant ..wonderful ..I like some pasta on the side or Italian bread to sop up the sauce.
I don’t make cacciatore but I make something very similar. A childhood favorite. One Noni raised rabbits. The other raised chickens. I had it with both. Thanks for the memories.
I made this and it is delicious! The cookbook recipe I have was no where near as good so I haven't made cacciatore in a long time until now. Thank you for posting!

WOW! Even the pan transforms into a different pan when it comes out of the oven. What a dish!
You obviously didn't watch the whole video. He explains why at 7:09 of the video
@@CowboyPhil73 No I didn't watch the whole video because I was skipping around to get all of the tips and instructions on preparing thew dish that evening for supper for my family. Best cacciatore recipe in the world
Not kidding.Just follow his steps exactly.Perfect
I made this and it was delicious!
I think you kinda have to know your way around the kitchen to get this recipe right though.
6 bell peppers to 1/2 onion isn’t quite right - more like 4 bell peppers (red, yellow, orange, green) and a large onion or two smaller ones.
I was also more heavy handed with the wine and salt (I guess it depends on how salty your tomatoes are and how heavily you salt your chicken and flour).

It’s hard to find the cured olives that he uses, but they are so good in this dish; honestly I would skip the olives unless I could use the cured ones.
It’s a great dish for a crowd and pretty economical to make.
You can make a pasta side dish or just serve it with salad and bread.
You’ll want some good bread to soak up all the goodness!
Pasquale. I just made this dish and it taste amazing!!!!!! Que buono. I cannot believe how much of difference putting thyme in this dish makes. It taste really good. Thanks for the tasty video. 👍🏻😊 . I look forward to make another dish of yours soon. God Bless. Cin Cin.

I love chicken cacciatore. I tried making it for the first time last week, but this recipe looks sooooooo much better. I have to try it this way
Made this today. Wonderful recipe. Thank you.
Mine differs by way of having it in thirds. Chicken fried halfway, sauce, then veggies sauteed. When sauce is done to taste, I add chicken, then reduce for an hour. Then I add my sauteed veggies last, then simmer for 15min.
I serve with rice of my preferred garlic mashed potatoes 😋
