The menu functions also depend on what mode you are currently shooting in. If your in Auto you won't have half the actual menu selections. Turn your dial to the Manual position and then click the menu button. All of your menu items will be there.

I didn't even know the t3i could do this.
Option 3 is good too if you want the back button to auto expose and focus than just half shutter to AE and focus with the back (option 1).
