Don't get me wrong, I like star wars and their storm troopers can be cool, but even if I had stormtroopers in my fantasy story and made them different not only in appearance but function, it would still look like I was ripping off star wars.

You're mixing some old and new lore here. Scions don't work like old Stormtroopers. Scions are broken into individual regiments and fight as full regiments in warzones more often than not. An example of this would be the story in the current Imperial Guard Codex. The Tratican War, which featured the VIII Catachan Army Group, included within was the Bardeshi 64th Militarum Tempestus Scion Regiment. That is the whole regiment, not just parts of it as it's stated in the actual story. They go over the wall into the heart of the Orks and are never heard from again. There are also far more Scions than there ever were old Stormtroopers.

I then actually listened to a book and appreciated the universe. I am sorry OMS if you take offense to this but you guys are good at giving summaries of the lore.
