      Good for him. This is the most appealing way to cook this dish I've seen. Not a slave to tradition. Oh, and if you add a tablespoon of heavy cream into your egg and cheese mixture for carbonara its delish

    I'm Italian and I'm serious.
    This is actually pretty good.
    If I were you, I'd put no cheese (or whatever that was) and create the "cream" using the pasta's water.
    It contains the starch from the pasta and if you mix it in the pan (medium heat) correctly you'll have a wonderful dense condiment.
    ^ That's the trick for pretty much everything, don't add cheese/cream/parmigiano, do that instead.
    It works wonderfully with carbonara, pasta alle vongole and tons of others. (but you shouldn't use it with any tomato souce)
    Still can't understand how that amount of garlic isn't too much for you.

    I can vouch for his recipe. I first tried this recipe after watching the movie "The Chef". It's one of my favourite quick meals! LOW HEAT is a must! (If your garlic is completely brown, you better repeat.) The only complain I have about his recipe is that he got way too much pasta for the amount of garlic sauce he made. The proportion isn't right, and I've cooked this dish many times myself.

    The best part about this customized recipe is that you can customize it further! Add shrimp to the pan or mussels or chicken, sausage, zucchini, eggplant, mushrooms, cherry tomatoes.. it's an excellent base for a delicious pasta.

    sometimes i use lemon instead of parmesan and add extra chilli flakes, the taste of wild spicy garlic and thyme plus the freshness of lemon is truly one of the best taste 😍

    Nothing against evolution in the kitchen...but aglio olio only includes oil garlic chili and parsley...and that’s why is fantastic: apparently so simple, actually very difficult to make the good one.

      Tina Refenes for sure! Although the main concern here is the use of cheese: completely against the main characteristic of this pasta. Actually aglio e olio is the base for several (almost all) kind of pasta, then if you start to add ingredients you are moving from aglio e olio to something different (nothing against, just to know!)
