Chicken Spring Rolls and Spring Roll Sauce

Ingredients :
Rice cakes, 50 gr of soy or rice vermicelli
5 to 6 gr of dehydrated black mushrooms, 6 to 7 gr of
dehydrated fragrant mushrooms, 1 gr of dried seaweed, 3 sticks of surimi, 1 teaspoon of soy sauce, 1 handful of chives, 80 gr of onions, bean sprouts, chicken, 15 gr of coriander,
1 egg yolk, mint leaves and salad
(I replaced the cup of dried shrimp with the seaweed and surimi due to allergies)
For the sauce:
7 tablespoons of Nuoc mam, 4 of lime
4 of sugar, 1 of fresh ginger, 1/4 liter of water,
2 shallots and 2 carrots
