Here is Idli Recipe. Idli is a one type of rice cake making with fermented rice and lentil batter. It is a very popular South Indian Breakfast Food. Watch How To Make Restaurant Style Soft And Spongy Idli At Home in Bengali language.
Ingredient's:-
2 cups Atop Rice washed and soaked for 7-8 hours
1 cup Parboiled Rice washed and soaked for 7-8 hours
1 cup Urad Dal/Biulir Dal washed and soaked for 7-8 hour
1 tsp Fenugreek Seeds washed and soaked for 7-8 hours
Methods of how to make idli:
1. Now blend Atop Rice and Parboiled rice together in a blender by adding water slowly to make a smooth paste.
2. After making the paste put it in a bowl.
3. Then blend the Dal and Fenugreek Seeds together by adding water slowly.
4. After making the paste add it in the rice paste. Mix them all together and beat well.
5. Now leave it for fermentation minimum 12 hours.
6. But it depends on weather, if it's winter then it might take 1 day and if it's summer them keep it for 12-14 hours for fermentation.
7. Definitely cover and keep it in a dark warm place for min. 12 hours.
8. left it to ferment for about 15 hours according to weather.
9. Add 1 tsp Salt as per taste (add after fermentation not before).
10. Now take Idli maker and brush properly oil in it.
11. Then add the batter in them.
12. Make sure the batter doesn't overflow, leave little bit space.
13. Because the Idli will swell up so don't fill up to the top.
14. The batter is poured and the water has heated up, start making Idli.
15. Add water up to the bottom line and start boiling.
16. When the water starts boiling place each plate one by one slowly.
17. Put the smaller plate first, then the medium plate and close the lid. Cook for 15 mins on medium to low flame.
18. After 15 mins check with a stick.
19. So again close the lid and cook for 5 more mins .
20. Turn off your oven, our Idli is ready.
21. Take out the Idli plates and demold .
