  • A food processor can make an astonishing range of recipes faster, easier, and more approachable. In the test kitchen, our longtime favorite has been the Cuisinart Custom 14 14 Cup Food Processor, which has performed well for years, but with new competitors on the market, it was time to see if it was still the best choice.

Part of the reason Cuisinart redesigned the blade was because the rivets on the old blade were a point of failure. They recalled that design a few years ago.

    • @pizzarat3275
      @pizzarat3275 Před 3 lety +12

@@chewfacity Because the old manufacturing method with the riveted blades caused the blades to eventually crack and leave shards of metal in the food. There was a massive recall where they sent the new redesigned blades for all models that used the old style blades. They could not attach the lower blade directly to the bottom any more, thus the gap.

I ended up getting this machine. So far, I love it - solid, quiet, and powerful.
The only serious issue I have is with the very short (30") power cord - it's just too short to reach any outlet in my kitchen. I had to resort to a powerstrip designed for electronics so I could use it on the counter, and not the kitchen floor.
It's obvious that Cuisinart (Marc Harrison, I'm looking at you) assumes that absolutely everyone has a new house with multiple outlets on every wall of their kitchen (and/or has power in their kitchen island).

For full test results you have to get the magazine or subscribe to their website. The need money to produce these videos and test the equipment. Subscribers pay for those costs. That said, subscribing to Cook's Illustrated/ATK is really reasonable. And it is nice of them to give us this generous amount of their knowledge for those not subscribing.

One thing about it that I love is the power plug. I wish all my small appliances had that hole in the middle plug. So much easier to plug in and pull out with arthritic hands.

Honestly, I think ATK chose the Cuisinart again because they were already predisposed in favor of it because they are most familiar and comfortable with it, and chose Cuisinart again because it makes it easier for them to keep using what they have, and stick with what they know better. The Cuisinart is a nice machine, and if I were to chose any other machine, it would definitely be the Cuisinart. However, the Cuisinart does not even come close to the Breville Sous Chef. Comparing the two is almost ridiculous. If you want to argue cost, then you could make an argument, but that is often a weak argument used in attempt to ignore an option, specifically when that other option is far superior on quality and features. If cost is no bearing, the Breville wins hands down. However, I would contend that the Breville is still a better value, because it is going to last much longer. The most expensive component on a food processor is the motor, and Cuisinart offers a flat 3-year warranty, whereas Breville has a 10-year warranty on the motor (for the Breville model in the video), and a whopping 25-year warranty for the 16 cup Pro model.
The Breville Sous Chef has way more capability, better plunger options for many different scenarios, and is built much better that the Cuisinart. When I studied both machines side by side, I could see a huge difference in the quality and durability of the materials, plus the Breville has much more power. The Cuisinart has a 720 watt motor, whereas the Breville Sous Chef (12 cup) has a 1000 watt motor, and Breville's flagship 16 cup Pro model has a 1200 watt motor! This is extremely important when you are looking at machine that has a motor to stand up for many years so that not only provides top notch performance without strain, but that it also holds up for many years. Cuisinart 14 is highly available, yet Breville can hardly keep the Sous Chef on the shelf at the time if writing. Good luck finding one. I am trying to find one to replace my previous one that got stolen during a move.
When you move up from the Breville 12 cup (in this video) to the flagship Pro 16 cup, it also has additional disk options which are pretty amazing. Also, the Breville has an ADJUSTIBLE slicer, whereas with Cuisinart, you have to buy separate, fixed blades. What a joke. I would rather save room in the blade box for other types of specialty blades, as well as dirty up only ONE slicer. It is very fast and easy to temporarily pull out the stem, adjust the slicer blade to new desired thickness, then pop it back in. On top of this, the Breville has a dough blade, which works way better than the Cuisinart, AND has a smaller inner bowl for smaller jobs, which the Cuisinart does not even offer. ATK did not cover ANY of these features, even though they are definitely relevant for any serious kitchen use, because they would have no choice but to concede that Breville is a vastly superior machine. Cuisinart has a long history and legacy, as they were the original, mainstream food processor, and good for them. However, they have been behaving like Vitamix, who has been sitting on their butts and past successes for decades, now with antiquated designs, only to fail at innovation, and get killed by the competition. Cuisinart is getting crushed by Breville in a similar, epic fashion that Vitamix got crushed by Blendtec. (The only difference thus far is that when Vitamix realized they were antiquated and could not beat Blendtec, they blatantly copied them, and then got sued for $33 million in one of the largest patent-infringement cases in the country.)
ATK got this one dead wrong between Cuisinart and Breville. Cuisinart is no longer number 1 on food processors, and has not been for about 6 years. Even Consumer Reports stated that the Breville Sous Chef was number 1, and had the backing of chefs around the world. Make no mistake, the Breville Sous Chef is a huge game changer, and Cuisinart is not even close.

Thanks, America's Test Kitchen! My "vintage" Cuisinart is finally needing to be replaced, as the stem that hold the blades broke and cannot be replaced. We have certainly gotten our use out of it! I bought it in the 80's, when I was in my 20's, a special deal in Spiegel catalog, with a bright red set of the full size and the mini food processors! It has been well loved and used and moved many times, and I came online to find out which one to purchase now. Once again, the tests done in your kitchens have helped immensely!

FYI, in some cases, for old parts that are no longer being manufactured, it may be possible to have a 3D printed version (i.e. a reproduction) made. Use Google to find someone who may be able to assist you with this service. For certain situations, such as a plastic bowl or plastic cover, you may be ableto use a plastic repair compound, such as Sugru, to repair them. As always, use common sense and be your own judge of risk when reproducing safety components.

Sad that Kitchenaid food processors have gone downhill. I have a model from 2010(?) that is far superior, came with mini-bowl, dough blade (makes perfect pizza dough) and feed chute was perfect for potatoes and tomatoes of average size. Tons of power, good pulse, and passes all your tests. The mirepoix test (I use it for that often) comes out better than what I saw for any of the models you showed on screen. Think it was $250 MSRP, worth every penny. Hope mine never breaks.

Actually, Cuisinart is owned By Conair and they have moved most of their production to China , with only a few from France. The French stuff is still as good as it was, but the Chinese stuff is cheap. THe Cuisinart Food Processor they chose as the winner is an OLD OLD model, their new ones just are not as good. I wish Lisa actually read these comments.I have been asking a specific question for a long time and she apparently never sees it. I have always wanted them to ADD one line to their review - whether the "thing" they have just reviewed has something that makes me want to replace my old recommended item with the new one - or is there not enough of a difference to do that?

I noticed the design change in the 14 cup Cuisinart when I bought a new one last summer after my 17 year old one’s bowl couldn’t be replaced. The motor was still fine, but bowl broke. I was frustrated making mayonnaise, or other sauces in it when I discovered that gap between the blade and the bottom of the bowl. I’ve made it work, but I do spend more time with the rubber spatula moving things around the bottom of the bowl in between pulses. It’s the thing that frustrates me the most about this machine, but not enough to try other ones. I’ve used other more expensive, and less expensive ones at friends houses, and I still really appreciate the Cuisinart I have at home. It’s good to know that after your rigorous testing, the one I have is still your best option. Thanks for this in-depth review.

Loved it, had all the blades, it did perfect batches of bread that the silly Kitchen Aid mixer couldn't handle. I retired a few years ago and switched from that model to the little Pro Classic (introduced in the 80's as the DLC-10). It works equally well. I like the one that won here but it's just too big for my needs. And people, don't buy a lousy discount store processor; it'll just irritate you and you won't use it. Also, a blender is made more for liquid dishes such as soups (though better is a stick blender that you can well, stick in the pot the ingredients were cooked in), food processors are more for dryer dishes, such as doughs, slicing or grating veggies, grating cheese etc.

"...explain the difference between a food processor and a blender"
In short, a food processor slices and chops solid foods, and a blender blends liquids. Each can do some of what the other does, but not as well. A food processor can also combine wet and dry ingredients to make dough (although usually not as well as a stand mixer). Trying to make a large smoothie in a food processor would be frustrating, and trying to make pizza dough in a blender would be a nightmare. Ideally, one would have both, but unless you REALLY like smoothies, I'd go for the food processor if you can only have one of the two.

I was shocked to see that the current price on Amazon for the Cuisinart was $350. It was $199 at Sur La Table just a few months ago. In this test, the KitchenAid 9 Cup Food Processor Plus ($135) didn't score high enough to get a "Best Buy" rating, but it was still "Recommended" (not "Recommended with reservations"), so that would be my suggestion if you can't afford the Cuisinart.

Year's ago i went through the conundrum of what food processor to buy. I ended up taking a couple back and ended up with the 9 cup Cuisinart. It works better than the larger kitchen aid due to its motor. The Kitchen aid cheats by using a capacitor assist, thus light weight motor. This also has the tendency of bogging it down and shutting it off. eventually you will need to replace the capacitor due to excessive overloads. The Cuisinart is about 3x the weight in the base and it shows when you do dough or ground beef. The 9 cup is so much more affordable its worth the reduction in dough batches. 3 cup flour works fine.

Okay, I just (10:45AM on January 7th, 2021) went to Sur La Table's Web site, and they show the Cuisinart Custom 14 for $229.95. The Amazon price is grossly inflated. The SLT site shows limited quantities available at most stores, and none at the Kirkland, Washington store. www.surlatable.com/cuisinart-14-cup-food-processor/PRO-505479.html

That's exactly the thing. A food processor is something you get if you do a ton of cooking that would warrant its use. It's the same situation as with stand mixers. It's not designed for someone who would rarely need one. For less frequent use I'd say try a slapchop or a mandoline, or just use a knife. You don't need a food processor.

I agree. If I didn't already have my Cuisinart, I'd rather wait to buy the best food processor than get a lesser model. Until I could afford one, I'd use what I had in my knife drawer. A mandoline is also an excellent suggestion, and the top-rated Swissmar-Börner is only around $50.

Did you get the replacement S-blade for the old one that was recalled? It took me 3 months to get mine, but they did send me a downloadable recipe booklet as compensation. (And I kept my old blade to use for fine mincing of delicate herbs and such, since it sits lower than the new blade. I use the latter for most tasks, though, for safety's sake.)

    • @960Liz
      @960Liz Před 3 lety

Yes, I did get the replacement blade, but I only use the original one “Japan” stamp on it. The new blade just does not cut as nicely. Since my unit is so old, I think the safety issue was with later year models, since cuisnart had no way to differentiate, they replaced all. I must admit I only hand wash with warm water, never dishwasher. Sure hope my bragging doesn’t jinx my processor!

@@960Liz "I think the safety issue was with later year models"
It's most S-blades that were riveted to the spindle, as far as I know. Cracks can develop after multiple sessions chopping hard items, such as crushing ice, chopping raw squash, etc. Cuisinart specified which ones were recalled based on serial number, so they definitely had a way to differentiate. If yours was recalled, as mine was, I'd be very careful not to use the old blade on hard stuff. Save it for when you really need it.

I got Breville about a year ago, an improvement over a 16 year old still working Kitchen Aid. I make mayonnaise often and it does that perfectly and quickly. I drilled a small hole (start SMALL) in the smallest clear plastic plunger to drizzle oil hands free. I use the main bowl for mayo. I only use the inner bowl for chopping or mixing mostly dry ingredients. I was surprised to find that liquids splatter into the larger bowl from the inner bowl. A tomato knife does better than the Breville with tomatoes. I am quite happy with this very useful machine and use it almost every day.

It dawned on me just because i was not feeding others that shouldn't mean I do not deserve those wonderful dishes (even though the ooohs aaaahs were nice)

I do not know about the 12 cup but the 16 cup Breville sliced superbly BUT its ability to chop meat was anemic at best and caused me to quickly box up and return it and continue using my 25+ years old Cuisinart with a Japanese motor which easily did at least 300% more beef chopping then the Breville. I could not believe the 1200 watt motor was so weak. I love my Breville Sous Chef 12. It did however stop working within a short few months but the manufacturer was quick to process a return/replacement. The buttons stopped working - wouldn’t register power on. Not sure what the issue was but I wondered if it was sticky liquid under the pulse button as it wasn’t a free moving. I’m more careful now to be sure all liquid stays clear of the buttons. As a vegan I process lots of vegetables and find the wide range of slice thickness to be useful. I always wash parts by hand with ease. Would recommend to anyone who feels they would use it multiple times each week and experience has taught me that if I can afford the real estate space on my counter I will use the product more often. This sucker is big, heavy and has a large footprint. Not worth hauling out to chop one carrot.

A good review, but I would weight the results differently. There's some quibbles here with the Magimix, that some of the accessories were not well described in the manual. Surely what's important here is whether they work well. For me, a thirty year warranty on the motor factors more than the written manual, as there are plenty of videos showing how to use any of these machines. Many people will get more from a good video. Also, the kneading attachment redesign on the Magimix is really good, and you didn't test it. The Magimix has a very good food mill as well for baby foods and sauces, and several very good juicer attachments. The mini bowl is excellent. Not disagreeing with the quality of the Cuisinart, just mentioning that warranty and features may be more important to some.

Cuisinart also makes the _Elite Collection 12-cup_ and _Elite Collection 2.0 14-cup_ food processors that both come with mini bowls as well as a more powerful motor. Were either of these tested? i have had 2 bowls that got stress cracks...and now the liquid leaks on the bottom. i have tried to order a bowl but they are always out of stock....for months. so now i cannot use liquid in the bowl.
trying to put the spindle on gets so stuck you have to wrestle the the thing off to remove it from the bowl. i have to have hubby do it. perhaps it is the stress cracks that makes it so snugg.
the large gray pusher thing has a seam and won't let you put it in the dishwasher...i didn't read the actual part in the beginning so i did .... but it would have been so easy to make this part w/o a seam so that no dishwasher water got into it. meanwhile, it too has cracked and i could have wound up w/a piece of plastic in our food....not good.
after a few months of use, i looked at the handle of the thing and it is full of food swished into it during the dishwasher clean up. it is nasty and you know it's unsafe... have tried removing it, but so far i've not been able to.
so in the beginning, it worked great, but after time the lack of quality shows up everywhere.
