  • A pharmacist turned to food to help improve multiple sclerosis. After years of painful injections Ashley Madden began eating a plant-based diet and the results she experienced were remarkable.
    Ashley’s symptoms began to fade quickly and over time became largely non-existent. Her lifestyle intervention worked so well that others began paying attention and asking what she was doing to achieve such a dramatic improvement.
    She would soon share her secrets to everyone through her recipes that are as delicious as they are powerful for her health. Many are featured in her blog and cookbooks, including her latest book Plant-Based Delicious.
    She is now many years into her journey and continues to be beacon of health.

    I have been living well with my MS for 17 years in part due to eating plant based. I got really serious about it in 2017 and I feel great! My MS symptoms are reduced and I have not had a relapse since. Great topic!

    Wow! We have some similarities in our stories! I also went from prescriptions to plants and will never go back! I wrote a book about my experience with MS and now I teach plant-based cooking classes to kids and adults as a result of my diagnosis!

    I was at a wedding a couple of years ago. They had a pasta buffet but no vegan sauce. There was hummus at the appetizer side. I thought, why not put hummus on my pasta? Wow, it was so good!

    "Meat and potatoes. You are halfway there!" I love that humor and encouragement. It's amazing how her family picked up on her healthy plant based eating as she brought them her dishes (and they began to experience medical issues.) I guess I have to start cooking some yummy dishes. 😋

    You're awesome chef. Sounds like you're enjoying life. I've been cooking since five years and making food always held poll position with my occupations but now being vegan it has been rough being that my wife cannot stand the tempeh, tofu, seitan (bad anyway) and has such a hard time. It's been a bumpy road but I think sharing recipes is great even if we're extracting parts of them.

    Stress triggers so many problems. Yoga, breathing exercises and meditation can help bring calm into your life.
    Proper nutrition, adequate sleep, stress reduction and daily exercise are all parts of living a healthy life style.

    Although I have different beliefs on what’s the proper way to eat. Im so happy you were able to better your health because of a diet change. Too many people in the world discount how important diet is to have good health.

    In our house we use Turmeric, Cinnamon, Ginger, Cardamom, and Black Pepper in our smoothies every day. If we have oatmeal, that goes in there too. We got so used to the last that it feel bland without it.

    Yes, I love being on a plant exclusive diet but making favorites like certain pastries such as sticky buns or crackers without processed white flour is challenging. Thank you for this interview.

    Any and every time a complex issue is brought up, stress is blamed. It's lazy - there are people who have negligible stress, namely psychopaths, but they get sick too.

    I'm 76 years young and decided to try vegan for health issues and I didn't want to hurt animals.
    Three and one half weeks later I developed a bad case of gout. I was very disappointed in myself and don't know what I did wrong.
    I also have diabetes and when I try lots of fruit my sugar also goes up.
    Please help! I gave up but would love to try again.🙏🏻

      Work with a nutritionist/ dietician to help you balance your meals with what changes that you would like to make as well as working with your medical history.
      In the interim you can,
      eliminate processed foods, check fruits, vegetables and grains for their glycemic index. Avoid what would trigger gout.
      Lots of online resources for the above.

      Fruit is not mandatory on a vegan diet. I do think you should probably meet with a plant based registered dietitian. Although, normally, meat/fish/chicken can trigger gout, fruit juice can too from what I just read.

      I am not sure if you are eating whole food plant based diet or some unhealthy version with processed foods. But studies have shown that a low fat whole food plant based diet can reverse insulin resistance, but you have to watch your carbs in the beginning and no refined or processed carbs. As your insulin resistance goes down you can gradually increase carbs. Focus on vegetables, fruits (a small portion in the beginning), whole grains (not flour), and legumes, especially legumes or beans that are reheated after refrigeration, since the heat cycles convert a portion of the carbs in beans and legumes to resistant starches, which are like fiber and become food for beneficial gut bacteria. The fiber also slow down blood sugar spike. Also order of eating matter, that is if you have greens or salad first, your blood sugar level is lower significantly compared to eating the same food with carbs first.
      Also avoid packaged vegan foods, as they are generally processed, many of them contain palm oil, which is high in saturated fat. Vegan cheeses, if made using coconut oil, should be avoided.

      Avoid adding oil in your cooking. It’s the oil that prevents glucose from a entering the cell and therefore remains in your bloodstream. Water/stock sauté works just as well.

      @@julieholmes946 yes, and in general, it is fat that interferes with insulin to metabolize glucose. So need to minimize fat.

    Thank you Ashley for clarifying that pharmacists do NOT just fill prescriptions....pharmacists go through 6-7 years of education and have the capabilities to provide excellent clinical interventions and such. The pharmacists you see in CVS do not encompass the whole pharmacy practice!

    I looks like she exchanged MS with looks of overfasting (sunken eyes, thin hairs) which would be sad.
